When you’re short on time and in a hurry, it’s hard to eat a good breakfast. Like you I was in a hurry one morning but woke up starving. My husband never leaves for work without eating breakfast and I try to do the same. You look in the refrigerator and see eggs, bacon, and cheese. You say, I’ve got bread and English muffins. A perfect morning treat to start your day off right, full of protein and full of flavor. If you love bacon, love avocado and love eggs then this may become your morning go-to. I save time by cooking bacon to use in dishes throughout the week or freeze it. But you’ll always have bacon on hand if you follow this tip. Because not everyone likes bacon, omit it from the recipe all together. Eggs, avocados and cheese are a great combination for topping toast or English muffins. I happened to have English muffins and used those. A great whole grain bread works really well for my Open-Faced Avocado Bacon Egg Breakfast Sandwiches.

Such an easy recipe to make any morning and kids will eat this as well except for the hot sauce. Easy to make for one or for many. Start by cooking bacon if you haven’t already done so. Toast your English muffins and sprinkle with cheese. Cook eggs to your liking such as poached, pan-fried or by cooking in rings so they fit perfectly on the muffins. I love using the rings for cooking eggs for sandwiches. Slice avocado, placing slices on top of egg and top with more cheese. Place sandwiches under broiler, serving with hot sauce and sour cream. Breakfast is served.

Open-Faced Avocado Bacon Egg Breakfast Sandwiches
2 English muffins (4 halves)
8 slices bacon, cooked and cut in half
1 avocado, sliced
4 eggs
1/2 cup Mexican blend shredded cheese or more
Hot sauce (your favorite brand), for garnish
Sour cream, for garnish
Split English muffins and toast each half. Sprinkle each half with shredded cheese while still warm.
Cook eggs as desired then place 1 egg on top of each muffin.
Divide cooked bacon and top each egg.
Add slices of avocado on top of bacon and sprinkle with more cheese.
Place sandwiches under broiler just long enough for cheese to melt.
Garnish with hot sauce and a dollop of sour cream and serve.
