Do you ever have the taste for something and it’s a must have? Went grocery shopping for the week and I wondered past the pork section in my local market. A wonderful looking pork loin roast jumped in my cart and because it wouldn’t go back in the meat case I brought it home. Seriously, my taste buds were saying feed me succulent, tender pork for dinner. So when I got home, I pulled out my recipe for easy Oven Roasted Pork Loin Roast. My method of cooking this roast lends to the most tender, juicy piece of meat ever made.
Start by seasoning your meat with a light coat of Olive oil, rub with one of my favorite seasonings, Chef Merito Pork Chop Seasoning and ground black pepper. You can find Chef Merito seasonings at Fresh Thyme Market or online. If you cannot find this seasoning, kosher salt or seasoned salt will work fine. Wrap your piece of meat in plastic wrap and refrigerate for at least 2 hours. A good time to season the roast is in the morning before work and as a result, it’s ready to cook when you get home.

Cooking this roast recipe is easy and pretty much hands off until it’s removed from the oven and served. The high heat method of roasting in addition to lowering the heat method of cooking seals in the juices allowing the juiciness of the meat to stay in. Always rest your meat at least 10 – 15 minutes before slicing and serving.

Oven Roasted Pork Loin Roast
2 pound pork loin roast
Olive oil
Chef Merito Pork Chop Seasoning
Ground black pepper
Rub pork loin with Olive oil then liberally sprinkle with pork chop seasoning and black pepper. Wrap roast in plastic wrap and refrigerate for at least two hours to overnight.
Remove roast from refrigerator and let sit at room temperature for 15 – 30 minutes. Heat oven to 475 degrees. Wrap a baking sheet with foil and place roast on sheet.
Bake at 475 degrees for 25 minutes then reduce oven temperature to 350 degrees and bake for 30 minutes or until inserted instant read thermometer reads 137 to 140 degrees. Remove from oven and let sit for 10 – 15 minutes.
Slice and serve with your favorite sides.
