“Overnight Sausage Breakfast Casserole”

Why do we often make certain recipes during certain times of the year? Maybe because of tradition or maybe some are believed to be eaten only at the holidays. Why is this I wonder? Well, I decided to break tradition and make an Overnight Sausage Breakfast Casserole. Boy was I glad my husband requested this casserole for breakfast. This is one of those recipe we should be baking all the time. It’s so easy and quick to make, refrigerate the casserole covered with foil, and bake the next morning.

During the holidays is when a breakfast casserole is made most often but I say this should cease. Bake up this bad boy more often. It lasts in the refrigerator several days and heats up really well in the oven or microwave. Makes a perfect heat and go breakfast.

However, casseroles of this type are used to feed large parties because they feed about 8 people. Yet what the heck, indulge yourself and enjoy the deliciousness. Plain white bread is cubed, sausage is browned, and eggs are mixed with half & half and seasonings. Place bread in a buttered baking dish, cover bread with sausage, cover sausage with cheese, and pour egg mixture over whole casserole. Cover casserole with foil and refrigerate 8 hours to overnight. Overnight is best for perfect results when baked. let casserole come to room temperature before baking.

Bake casserole until browned and puffy. Let sit 15 minutes before serving. Serve casserole with fresh fruit. Save this recipe in a safe place because I guarantee you’ll be baking this recipe one weekend soon. It’s deliciously cheesy and full of flavor. perfect to get your weekend mornings started off right. Enjoy!

 

Overnight Sausage Breakfast Casserole

1/2 loaf of sliced white bread (I use Butternut Brand)

1 pound regular or sage pork sausage (Jimmy Dean or Bob Evans)

2 1/2 cups sharp cheddar cheese

2 cups half & half

1 t. dry mustard

1 t. fine sea salt

1/2 t. black pepper

5 large eggs, slightly beaten

Butter, for greasing baking dish

 

Grease a 13 x 9 baking dish with butter and set aside. Cut bread into 1-inch cubes and place in baking dish.

In a medium skillet, brown sausage until no pink remains over medium-high heat. Remove sausage from skillet to drain on paper towels. Spread sausage evenly over bread then top with cheese.

Using a medium mixing bowl, stir together half & half, dry mustard, salt, and pepper with eggs.

Pour egg mixture over cheese. Cover casserole with foil and refrigerate for at least 8 hours to overnight.

When ready to bake casserole, remove from refrigerator and allow to sit 20 minutes at room temperature before baking.

Heat oven to 350 degrees. Bake casserole covered until set and golden brown, about 50 minutes.

Remove casserole from oven and allow to set for 15 minutes before serving.

Serve casserole with fresh fruit.

Makes 10 servings.
