Parmesan Chicken
If you love Parmesan cheese, chicken and cream of mushroom soup, you’ll love this chicken recipe. If you want dinner in approximately 1 hour, you’ll love this recipe. This was one of the first recipes cooked for my family and it was a hit with my Mom, Dad and sister.
Until I was 15 years old, Mom stayed at home with my sister and I. Boy, did that take some getting use to. Dad wasn’t quite sure what to make of Mom going back to work. Dad was use to Mom making his lunch and cooking breakfast for him.
My sister and I were use to breakfast and her getting us out the door for school on time. Seeing her get ready for work while Dad was getting ready for work and my sister and I ready for school felt odd to say the least. Then we came home from school to no “Mom.” This was indeed a strange and unfamiliar picture.
Parmesan Chicken
I remember the first-time asking Mom about dinner. I asked, Mom what are we having for dinner?” She replied, “Not sure yet I just got home from work.” I remember standing in the kitchen stunned. Like, “What?” I went to my room and finished my homework.
So, I remember one morning asking Mom if I could start dinner before she came home from work. She said, sure. What are you planning on making?” I know I can do chicken and went to the freezer. Mom saw what I pulled out and said okay. Mom taught me well.
I placed the chicken in a bowl of water in the frig to thaw during the day and behold when I got home from school it was thawed and ready for me to cook. Look out world, Michelle is in the kitchen.
I pulled out this Parmesan Chicken recipe. Mom and I found this recipe together one night looking at magazines and newspaper food sections. It was my lucky day because we had all the ingredients to make this chicken dish. I was so excited, and Mom was going to be amazed.
So, I prepared the chicken for my family and they loved it. I cooked white rice and green beans to accompany the chicken. It was de-Lish! So, from then on, you were most likely to find me in the kitchen starting dinner for Mom.
I still use this Parmesan Chicken recipe to this day. It’s an easy, simple weeknight meal with tender chicken and big flavor, all smothered in cream of mushroom soup. Serve the gravy over rice and voila! Your family will want this dish over and over. Try it!
Parmesan Chicken
Parmesan Chicken
1/2 cup dry breadcrumbs
1/2 cup grated Parmesan cheese
1/2 t. oregano leaves
Generous dash garlic powder
Generous dash black pepper
3 to 4 pounds chicken parts
2 cans Campbell’s Cream of Mushroom soup
1 cup milk
Paprika
Combine crumbs, 1/4 cup Parmesan cheese, oregano, garlic powder, and black pepper. Roll chicken in crumb mixture.
Divide chicken between two large, shallow baking pans, skin side down. Bake at 375 degrees for 20 minutes. Flip chicken over, bake for another 20 minutes.
Meanwhile, combine soup and milk. Pour over chicken. Sprinkle with remaining Parmesan cheese and paprika. Bake 20 minutes more or until done.
Makes 4 – 6 servings.
This dish is absolutely delicious, and at its best served with rice.
