Mom is on my mind today and Easter is just a few days away. However, some of us are getting snow. Imagine that? So, how about a little something sweet for the kids and for the adults, too. Who doesn’t love anything with peanut butter? The minute Easter rolls around you see Reese’s Peanut Butter Eggs everywhere. Try your hand at making my Mom’s easy recipe for Peanut Butter Balls to ease your peanut butter and chocolate craving.
Mom’s recipe can be enjoyed anytime of the year, day or night. Give them as gifts for Christmas, birthdays, to say thank you, take to potlucks, or do like I do and share them with friends at my workplace. They will all go crazy for these little nuggets of peanut butter with rice krispies for crunch coated in chocolate. Eat your heart out Reese’s, Michelle is in the house with her Peanut Butter Balls. You will not be able to stop at one.
Peanut Butter Balls
Peanut Butter Balls
2 cups creamy peanut butter
2 1/2 cups confectioners’ sugar
4 T. butter, melted
3 cups rice krispies
Chocolate candy coating
In an electric mixer, combine peanut butter, confectioners’ sugar, and butter. Stir in rice krispies. Place in refrigerator and allow to chill at least 24 hours.
Roll into 1 inch balls, place on parchment lined jelly roll pans. Dust your hands with confectioners sugar to assist in rolling if necessary. Return to refrigerator for at least 2 hours. Melt candy coating and dip balls completely in chocolate. Place on jelly roll pans. Return to refrigerator until chocolate is set. Store in air tight container in refrigerator.
Note: Peanut butter mixture can be made ahead and refrigerated until ready to use. If mixture is too soft, stir in a little more confectioners’ sugar.
