My adapted recipe comes from requests from coworkers. When she showed me the recipe, it reminded me of a recipe I had on file from years back. Sometimes the number of recipes I have is crazy. Not sure where I had first seen the recipe but it had been a long time since I had made them. I forgot how good you could make a store-bought brownie mix taste. These brownies were an absolute hit and no one could get enough. Seems like no matter how much I bake, it is never enough. I’d say that’s a good thing.

However, Easter is a few days away and what better day to share peanut butter and chocolate. It’s the ultimate pairing. A fresh-baked, cooled pan of brownies are the first layer. Believe it or not, this recipe uses a store-bought brownie mix so make sure you use a 13×9-inch pan size mix. Cooled brownies are topped with a simple peanut butter, powdered sugar, butter layer. Now spread a layer of melted bittersweet chocolate over the top. Place the pan in the refrigerator for at least 30 minutes or until ready to serve. Bring Peanut Butter Creme-Filled Brownies to room temperature for at least 15 minutes to make cutting through chocolate easier. A perfect Easter dessert.

Peanut Butter Creme-Filled Brownies
Peanut Butter Crème-Filled Brownies
1 box 13×9-inch pan size Supreme Brownie Mix
1/2 cup (1 stick) salted butter, softened
3/4 cup creamy peanut butter
2 cups confectioners’ sugar, sifted
2 t. milk
1 cup bittersweet dark chocolate chips (60% cacao or more)
1/4 cup (1/2 stick) salted butter
Heat oven to 350 degrees. Coat a 13×9-inch baking pan with non-stick cooking spray and set aside.
In a medium mixing bowl, prepare brownie mix according to package directions. Spread brownie batter into prepared baking pan. Bake brownies according to package directions. Remove from oven and cool completely on wire rack, about one hour.
In a large mixing bowl, combine butter, peanut butter, confectioners’ sugar, and milk until smooth and creamy. Spread peanut butter mixture over cooled brownies.
Using a microwave safe bowl, melt chocolate chips and butter, about 45 seconds to one minute, stirring until smooth. You can use a small saucepan over low heat if desired. Let chocolate cool for 5-10 minutes. Spread chocolate over peanut butter filling and place pan in refrigerator for at least 30 minutes or until ready to serve.
For ease of cutting, let brownies sit at room temperature 15 minutes to soften chocolate.
Store leftovers in airtight container in refrigerator.
