Time to socially lubricate your mind. Saturday night, relaxing with the family after dinner means a cocktail is in order. Another impromptu gathering, so creating a cocktail could mean scrounging around the pantry for juice and plowing through the place your liquor is stored. That’s kind of how this drink of choice came about one Saturday evening. My Pineapple Coconut Rum Cocktail was made when wanting a cocktail because no one wanted to run to the store. I realized I had some Bacardi white rum, a can of pineapple-coconut nectar, pineapple juice and pineapple slices left over from a cake I had made. I always have fresh lemons so it seems like my cocktail was all set.

This Pineapple Coconut Rum Cocktail is refreshing and perfect for a beautiful summer night. A Pina Colada first came to mind and I had no coconut milk. Yet this cocktail is great with just pineapple juice but the pineapple-coconut nectar adds just the right amount of coconut without it being heavy, very sweet cocktail. You can make this cocktail virgin if you happen to be serving kids. All kids love juice. Fresh pineapple can also be used in the cocktail and garnish. Use what you have which is the fun of coming up with a great cocktail.

Pineapple Coconut Rum Cocktail
Pineapple Coconut Rum Cocktail
2 oz. (1/4 cup) Bacardi white rum
4 oz. (1/2 cup) pineapple juice, chilled
2 T. pineapple-coconut nectar, chilled
1 T. fresh lemon juice
Sliced pineapple, for garnish
Ice cubes
Fill an old-fashioned or highball glass with ice. Pour in order rum, pineapple juice, nectar, and lemon juice. Stir and garnish with pineapple slice. Enjoy!
