“Power-Up Morning Smoothie”

Everyone needs a jumpstart in the morning. So, I know smoothies are everywhere but give my Power-Up Morning Smoothie on for size. Filled with leafy greens like spinach but you can use kale. I enjoy using spinach because you absolutely cannot taste it. When I began making smoothies, I was really leary about using greens in them. Now I know better and it’s the perfect way to get a serving of greens in your diet easily and when running short on time.

Besides spinach, ingredients include oat milk, almond butter, flaxseed meal, frozen banana, and a hint of cinnamon. I use oat milk because I have a sensitivity to almonds in large quantities. Through the years after trying numerous brands of nut or alternative milks, oat milk is perfect for me. I recommend Simply Oat milk. It’s creamy and perfect for making smoothies in my opinion. Use whatever one suits you. Simply comes in creamy, original, and vanilla.

Perfect way to get a serving of leafy greens in your diet

This smoothie has almond butter for a slight nutty taste and thickening agent. Flaxseed meal is also in this smoothie for thickening and fiber Bob’s Red Mill is great. You can grind your own flaxseeds if so inclined. Flaxseed meal is used as an egg replacement in baked goods especially in vegan baking. Making flax egg is super easy by combining 1 Tablespoon flaxseed meal in 3 Tablespoons of water to replace 1 egg. Allow mixture to sit for 10 minutes and stir until thickened then proceed with your recipe. Trust me it works marvelously. The last two ingredients are a frozen banana and a hint of cinnamon. Keep frozen bananas in your freezer for convenience.

Smoothies taste great and most are high in carbs but low in fat which still makes these drinks great starts to your day. Choose ingredients carefully. The heavy usage of fruits are not good for diabetics so cut carbs in another way throughout the day. I try to keep the addition to 1 fruit when possible. That said, whiz this baby up in the blender, power-up and you’re on your way. Have a great weekend!

 

Power-Up Morning Smoothie

1 cup Simply Creamy Oat Milk

1 frozen medium banana, cut into pieces

2 T. almond butter

1 T. flaxseed meal

1/8 t. ground cinnamon

1 handful of roughly chopped spinach or kale

 

Place all ingredients in a blender and puree until smooth and color is uniform.

Serve immediately.

 

Makes 1 serving. Carbs: 51 grams
