Savory and sweet is the name of the game in my Prosciutto Apricot Almond Goat Cheese Spread. I’m such a sucker for anything where I can taste a bit of salt and a bit of sweet. Don’t you think there is just something about that combination? It’s intoxicating and 100% addicting. Don’t believe me…just give this spread a try. New Years is only a couple days away.

So, what makes my spread so good? Well start by mixing goat cheese and cream cheese together. Goat cheese can be a bit on the sour side so the cream cheese smooths out the flavor palate. Now add in all the good stuff. Whether you like prosciutto or not and whether you add it is up to you. I highly recommend the addition because of the salty factor. Plus have your meat sliced very thin then fry until crisp. Finely chop once crisp as it works better than bacon because bacon tends to overwhelm this spread.

In addition, finely chopped dried apricots and apricot preserves add the sweetness. It’s so unexpected you’re going to say “what“? It’s delicious Sliced almonds are added for a bit of crunch along with dried or fresh parsley for savoriness. You can provide honey for drizzling especially if serving with apple slices like Granny Smith. A nice savory cracker or bagel crisp pairs remarkably well. My goat cheese spread only needs to chill about 30 minutes to 1 hour before serving yet can be made well in advance of serving. Sounds like a plan for New Years, don’t you think? Prepare enough for your guests because your serving dish will be empty in no time. And if you happen to have any leftovers, just simply enjoy! Happy New Year everybody!
Prosciutto Apricot Almond Goat Cheese Spread
8 oz. plain goat cheese, softened
4 oz. cream cheese, softened
6 dried apricots, minced
1/3 cup crumbled prosciutto (fried until crisp)
1/3 cup sliced almonds, broken up
1/4–1/3 cup apricot preserves
1 t. dried parsley
1/8 t. fine sea salt
Honey, for drizzling, optional
In a medium bowl, cream goat cheese and cream cheese until smooth.
Stir in apricots, prosciutto, almonds, preserves, parsley and salt until evenly combined.
Place in a serving dish and refrigerate for 30 minutes to 1 hour for flavors to meld.
Bring spread to room temperature and drizzle with honey if you like before serving with apple slices and savory crackers.
Makes 8 to 10 servings.
