Made diced potatoes, boiled eggs of which I like loads of in my potato salad, Savory Honey Dijon mustard, crisp sliced green onions, a hint of sugar, and sweet relish. So there you have the makings of both savory and sweet. I most often make Savory Green Onion Potato Salad when barbecuing ribs or smoked polish sausage. Just seems to be the perfect match plus one of the husband’s favorites. In addition potato salad keeps well for a couple of days in the refrigerator giving the salad a quick stir before serving.

Savory Green Onion Potato Salad
Savory Green Onion Potato Salad
5 medium russet potatoes, peeled, cooked, cooled and cut into small dice
4 large boiled eggs, peeled and chopped
3 green onions, sliced
2 T. Savory Honey Dijon mustard
2 T. sweet relish
1 cup Hellman’s Olive oil mayonnaise
1/2 t. granulated sugar
Salt and pepper to taste
Chopped chives for garnish, optional
In a large serving bowl, mix all ingredients. Add salt and pepper to taste. Refrigerate one hour and serve.
