“Slow Cooker Chicken Noodle Casserole”

Now and then a recipe comes to you that you’re just not quite sure about  I’m thinking how is this possibly going to taste good with so few ingredients or better yet the combination of ingredients. Can I get an “Amen!” That said, You’re going to love this 5 ingredient recipe for Slow Cooker Chicken Noodle Casserole. The casserole is creamy and tangy with pieces of chicken and egg noodles. Best of all, kid’s will devour this dish.

One day a friend called and of course, we started talking about what we were thinking of cooking for dinner. She begin telling me about a slow cooker meal her daughter made. Mind you, she only gave me the ingredients and not really how much of anything. So later in the week with a trip to my local market, I thought about this recipe. I bought boneless chicken breast, cream cheese, and Italian dressing. I remembered I already had Ro-tel tomatoes and noodles. I was all set.

I have no idea where her daughter got this recipe but it’s amazing. Just winging it has worked out marvelously for this hands off meal. To prepare, place chicken breasts in bottom 6-quart slow cooker. Place cream cheese on top and it does not have to be at room temperature. Pour in a can of original Ro-tel tomatoes and a bottle of creamy Olive Garden Italian dressing. Add in noodles at the end of cooking and shredding chicken. As not to dirty anymore dishes, I added uncooked noodles and allowed them to cook in the sauce. Give the casserole a good stir before serving.

If you own a slow cooker with a timer where you can preset a start time, great. Otherwise, you need about 5 hours of complete cooking time, 4 hours on low plus 1 hour after noodles go in. Kid’s love noodles of any kind and this recipe is a kid pleaser, not to mention, the tasty sauce and tender chicken. I doubt anyone will be fussing at the dinner table except fighting for a second helping. Enjoy!

 

Slow Cooker Chicken Noodle Casserole

1 pound boneless, skinless chicken breasts (2 -3 halves)

1 – 8 oz. package cream cheese

1 – 10 oz. can original Ro-tel tomatoes

1 – 16 oz. bottle Olive Garden Italian Salad Dressing

Half package of No Yolk Broad Noodles

 

In a 6-quart slow cooker, lay chicken breast on bottom of pot.

Place cream cheese on top of chicken and pour in can of tomatoes.

Empty entire bottle of dressing over contents and cover with lid.

Turn setting to low and cook for 4 hours.

Remove chicken and shred or chop then return to pot with noodles. Press noodles into sauce and cover to cook another 45 minutes or until noodles are cooked.

Stir casserole to combine all ingredients and serve. Refrigerate any leftovers.

 

Makes 4 to 6 servings.
