I know here we go again, what to cook for dinner? If you’re like me, I go through the freezer looking at what I’ve bought in the past week or so and haven’t cooked. Yes, we change our minds having the taste for something one day and the next no not that today. Fortunately, I have a husband who doesn’t mind leftovers making it easy to come up with new meals on the fly. Today, I’m sharing a super simple meal with items you may already have available, Smoked Kielbasa Potato Bake. I have made this dish for breakfast and for lunch. The smokiness of the sausage and the crispy potatoes topped with cheese is irresistible.
Smoked Kielbasa Potato Bake
Use your favorite smoked kielbasa or sausage and cut into 1/4-inch rounds. I used russet potatoes because that’s what I had but you can use red or yukon golds. At this point, cut potatoes into medium cubes then combine the rest of the ingredients except cheddar cheese.

Line a large baking sheet with foil and grease with olive oil. Spread out sausage mixture into a single layer. Bake in a 400 degree oven for 35 to 40 minutes or until potatoes are fork tender and sausage is caramelized. Remove pan from oven and sprinkle on cheddar cheese. Return baking sheet to oven long enough to melt cheese. Remove from oven and serve.

This is a dish even the kiddos will love. You can easily adjust recipe to serve more if necessary. This recipe works great for breakfast topped with eggs or served with homemade grits. If you’d rather use turkey, chicken or vegan sausage be my guest. Enjoy eating what you love because this is a recipe you’ll keep handy. Even last minute meals can be delicious and crave-worthy. Smoked Kielbasa Potato Bake
1-pound smoked kielbasa or sausage
4 large Russet potatoes, cut into 1/2-inch cubes
2 large shallots, sliced
1/2 t. fine sea salt
1/2 t. red pepper flakes
1 t. sweet paprika
1 t. garlic powder
3 T. Olive oil plus 1 t. for greasing pan
1 cup shredded sharp cheddar cheese
Heat oven to 400 degrees. Line a jelly roll pan with foil then grease foil with 1 t. oil.
Slice sausage into 1/4-inch slices and place in large mixing bowl with potatoes, shallots, salt, pepper flakes, paprika, garlic powder, and 3 T. Olive oil. Mix until ingredients are thoroughly coated with seasoning and oil.
Spread mixture onto prepared baking pan in a single layer. Sprinkle with more paprika if desired.
Bake in hot oven for 35 to 45 minutes, stirring at 15 minute intervals to ensure potatoes are cooked through and sausage is brown and crisp.
When potatoes are soft and brown, remove pan from oven and sprinkle mixture with cheddar cheese. Return to oven for about 5 minutes until cheese is melted.
Makes 4 servings.
