So, what’s the craze with using store-bought cake mix as a shortcut to making cookies? Cookie dough in 10 – 15 minutes is why. I’m sharing my version of Soft White Cake Funfetti Cookies. Filled with Funfetti sprinkles of your choice, kids will love making a batch of thier own. They can be as creative as they want to be and a perfect project for a rainy day.

Start with a white cake mix brand of choice in a large bowl. I prefer Pillsbury brand but use what you like. Next, whisk in baking powder.

Using a hand mixer, beat in eggs, one at a time until well combined. The mixture will be crumbly but not dry. Mix in vegetable oil and vanilla until thoroughly combined.

With a large spatula, stir in Funfetti sprinkles until evenly mixed. Now, I used Wilton brand in 4 colors like pink, blue, green, and yellow in the cookie dough. You can incorporate all of one color or multiple as I have. Feel free to adjust amount of sprinkles to your liking. Baking these cookies is all about fun and creativity.

Chill cookie dough for 30 minutes to firm up as the dough is soft in texture.

To bake the Soft White Cake Cake Funfetti Cookies, line two baking sheets with parchment paper.

Roll dough into 20 cookie balls and roll each ball in organic cane sugar.  Place on prepared baking sheet 2-inches apart. The cookies will spread a little yet chilling keeps them from spreading as much.

Bake in a 350 degree oven and watch the magic happen for 10 – 12 minutes. The cookies puff up and begin to crack and only very lightly brown.

Allow cookies to cool on baking sheets to firm up and then remove cookies to wire racks to cool completely.

Soft White Cake Funfetti Cookies

1 – 15.25 oz. package white cake mix

1 t. baking powder

2 large eggs, room temperature

1/3 cup vegetable oil

1 t. pure vanilla extract

2 t. each blue, green, pink, and yellow sprinkles/jimmies (I use Wilton), to taste

Organic cane sugar, for rolling

 

Heat oven to 350 degrees and two baking sheets with parchment paper. Set aside.

Whisk together cake mix and baking powder in a large mixing bowl.

Using a hand mixer, mix in eggs one at a time until combined. Mixture will look crumbly.

Mix in vegetable oil along with pure vanilla extract until well combined. 

Stir in Funfetti sprinkles with a large spatula until mixed evenly.

Chill cookie dough for 30 minutes to one hour.

Divide cookie dough into 20 dough balls. Roll in cane sugar and place cookies 2-inches apart on prepared cookie sheets.

Bake for 10 to 12 minutes. Cookies will puff up and begin to crack. 

Remove cookie sheet from oven and allow cookies to cool several minutes to firm up. Place cookies on wire rack to cool completely.

Store cookies in airtight containers.

 

Makes 20 cookies.
