The weather decided it had other plans as a major downpour happened so I ended up cooking in the oven. My Spice-Rubbed Pork Loin turned out to be one recipe that does double duty. Spice-Rubbed Pork Loin
Now, you know pork loin is a great piece of meat because it’s low-fat and tender. Similar to tenderloin yet thicker which is why if you can find pork loin filet instead all the better. My recipe is for a 1.5-pound pork loin filet. Cut the loin half if needed to prepare exactly like this recipe or you’ll find cooking time my vary. You may use pork tenderloin if needed or desired.

So, to prepare this pork couldn’t be any easier. Mix your ingredients for the rub in a small bowl and you may have extra. Store leftovers in an airtight container for use later. Meanwhile, rub Olive oil over pork then generously coat pork with rub. Let meat sit while you prep your grill or oven heats to 425 degrees. Room temperature meat (at least 20 minutes) cooks faster and more evenly. You’ll notice the rub becomes a glaze while it sits. Cook according to recipe directions and achieve a mouth-watering pork loin.

Spice-Rubbed Pork Loin
1.5-pound pork loin filet
Olive oil
1/4 cup dark brown sugar
1 T. smoked paprika
1 T. Kosher salt
2 t. garlic powder
1 1/2 t. onion powder
2 t. chili powder
2 t. black pepper
1 t. ground cumin
1 t. celery seed
Rub pork loin with Olive oil. Generously coat pork with spice rub and let sit at room temperature 20 to 30 minutes before cooking.
While meat sits heat oven to 425 degrees or prepare grill according to instructions, leaving one burner on high heat.
To prepare pork on grill, place pork over direct heat and cook for 8 to 10 minutes. Now, move pork to indirect heat and cook 35 to 40 minutes or until instant read thermometer inserted reads 145 degrees. Remove pork immediately to platter and cover with foil to rest 10 minutes before slicing.
For cooking pork in oven, heat Olive oil in an oven-proof skillet and brown meat on all sides, about 5 to 7 minutes. Place oven-proof skillet in oven and roast for about 15 minutes or until instant read thermometer inserted reads 145 degrees. Let pork rest for 10 minutes before slicing.
Store extra spice rub in a airtight container for later use.
