I’ve tested and retested this recipe to find the right flavor profile so here you have it. The marinade is thick and coats the chicken well as you can see in the picture below. Second, place chicken in refrigerator to marinate overnight. This allows your chicken to harbor all the delicious flavors happening in your bowl. Third, this is an easy recipe for a fantastic weeknight meal because you marinate chicken and then bake or grill the next day. How easy is that?

Penzeys makes Sunny Paris and it works wonderfully in any marinade. Sunny Paris also makes a great additive to homemade salad dressings. I love it sprinkled on roasted vegetables and baked potatoes. Sunny Paris Yogurt Marinated Chicken Leg Quarters

4 chicken leg quarters (thigh and leg)

3 T. Penzeys Sunny Paris seasoning

2 T. water

1 cup plain Greek yogurt

1 t. lemon pepper seasoning

1/2 t. paprika

Salt and pepper to taste

In a large bowl, mix Sunny Paris and water. Let stand 5 minutes to hydrate. Add in Greek yogurt, lemon pepper, and paprika. Add chicken, cover thoroughly with marinade. Pierce top of chicken with knife to allow marinade to penetrate. Place in refrigerator for 4 – 6 hours to overnight. Remove and let sit at room temperature for 30 minutes before cooking. Preheat oven to 350 degrees. Place chicken in large baking dish. Sprinkle chicken with salt and pepper and bake chicken uncovered for 45 minutes to 1 hour until browned.

Note: This recipe can be made on the grill. Use marinade to baste chicken as it cooks. Cook thoroughly after last basting and discard remaining marinade. You can also use chicken breasts if you like.
