Swedish Meatballs and Swedish Potatoes
Meatballs are perfect anytime and can be made ahead of time for easy prep. Make your meatballs the night before and cook the next. Sometimes I find this makes them more flavorful because flavors are allowed to permeate the meat. You know I just love food to taste good otherwise whats the point of cooking. Same goes for the potatoes. Chop onion and parsley the night before but wait to dice potatoes because they will become pink. Saving time is the name of the game especially on a weeknight. Fortunately, my Swedish Meatballs and Swedish Potatoes cook quickly, in less than an hour. I forgot to mention that you will need two non-stick skillets as they make cooking this recipe hassle free.

Who doesn’t love cream, cream in anything as it gives this recipe the richness factor. Same for the potatoes with oniony, creamy goodness. I use both ground beef and ground pork as this combination just works for meatballs, making them moist and tender. The tender meatballs are something special as the sauce has flavors similar to a bechamel with the addition of nutmeg and allspice. When the sauce hits your tongue you know you taste a hint of spice but nothing overpowering. Paired with potatoes, not much can taste any better, a match made in heaven.
