I love my slow cooker. There are times when it’s the most handy kitchen appliance when running short on time or needing to fix meals while doing other things like working. That’s my kind of recipe since I do this all the time.

To make the pot roast coat beef with seasoned flour and brown both sides in a skillet. Place beef in slow cooker and add in onions, garlic, brown sugar, bay leaves, and beef broth. Cover your slow cooker and cook on low for 7 to 8 hours. The beef will be perfectly tender and ready for serving when you get home from work. Get ready for your taste buds to go wild.

First, remove beef from slow cooker and make gravy to serve with and over mashed potatoes. Second, shred the beef for beef and cheddar sandwiches toasted like grilled cheese. Third, shred beef and mix in your favorite barbecue sauce for barbecued beef and serve with a side of Cole slaw. Sounds like some fabulous meals are coming your way. Tender Slow Cooker Pot Roast – Three Ways
2 1/2 pounds Beef Chuck Roast, quartered
3 T. all-purpose flour
1 T. kosher salt
1 t. pepper
2 T. Canola oil
1 large onion, sliced
1 large garlic clove, finely chopped
1 T. light brown sugar
2 cups beef broth
2 bay leaves
Combine together flour, salt and pepper in a Ziploc plastic bag. Place meat in plastic bag, close and shake to completely coat meat with flour mixture. Heat oil in a large skillet over medium-high heat. Place meat in skillet and sear each side of each piece of meat to a nice golden brown. Be careful not to burn. Do not crowd your skillet when searing meat so brown meat in batches if necessary.
Turn your slow cooker to low heat setting. Add onion, garlic, brown sugar, beef broth and bay leaves to slow cooker and stir until sugar is dissolved.
Once meat is seared, place pieces of meat in slow cooker and cover top of meat with some of the sliced onions. Cover with lid and cook on low for at least 7 to 8 hours. Add salt and pepper to taste.

Prepare Slow Cooker Pot Roast according to recipe directions. Remove roast from slow cooker when done to a large mixing bowl and shred pot roast with a fork into large chunks. Add your favorite barbecue sauce to suit your taste buds and mix. I prefer just adding enough to coat meat. Add salt and pepper to taste.
Serve Barbecue Beef on warm buns with Cole slaw and sweet pickles on the side. Serve Beef and Cheddar Sandwiches with french fries of your choice.
