Fry up one pound of black pepper bacon or make your own if you like. Just coat fresh bacon with coarse ground black pepper and bake at 350 degrees until crispy. I do this when my market doesn’t have this beloved bacon in the meat case. I use the leftovers for breakfast the next day. Slice fresh ripened tomatoes while bacon is cooking and they should be served at room temperature.
Purchase store-bought Sriracha mayo or mix Sriracha with your favorite mayonnaise to your liking. It’s great on other sandwiches as well so keep some on hand. Use green leaf lettuce because it lends a tender crunch to your sandwich. Slice an avocado just before you’re ready to build you BLT to keep that luscious green color.

Use a good quality bread for this sandwich and a brand you enjoy as it makes all the difference in flavor and texture. A good sandwich always begins with good bread because eating a sandwich should be an experience. Toast your bread just before building your sandwiches.
Smear both sides of your split roll with mayo then top with bacon. Add on lettuce, tomato, and avocado slices. Place other half of roll on top, cut in half and serve. You’ll hear your taste buds talking back with “YUM, YUM, and YUM.” This really is an incredible sandwich with bold taste, texture, and not to mention so easy to make. Black Pepper Bacon BLT with Sriracha Mayo
One pound sliced black pepper bacon
Green leaf lettuce
Tomato slices
Avocado slices
Rustic French batards or baguettes
Sriracha mayo, store-bought or homemade
Place bacon in single layer on a baking sheet and bake at 375 degrees until crispy, turning hallway through cooking, about 25 minutes. Drain on paper towels.
While bacon is cooking, slice tomatoes and prepare lettuce for sandwiches.
When bacon is done, split and toast rolls under broiler. Slice your avocado at this point.
Spread mayo on both sides of roll and top bottom half with bacon. Add on lettuce, tomato slices, avocado slices and top with other half of roll. Slice sandwich in half and serve with your favorite summertime side.
Note: Make your own Sriracha mayo if you like by mixing 1/2 cup mayonnaise with Sriracha, adding a teaspoon at a time until desired taste is achieved. Keep any leftovers refrigerated for other uses.
