Based on my recipe for Sugar Cookie Cherry Cobbler, this easy dessert is made in one pan. That means easy prep, easy clean up and easy serving. I don’t know about you but I love simple and easy when I need something fast to feed a hungry crowd. Tender apples in a buttery, sugary syrup with a fantastic pop of ginger and salted caramel streamed on top. OMG! The magic made in one skillet.

In this recipe I use Granny Smith apples because of their tartness and ability to hold together when cooked. Diced apples are mixed with salt, vanilla, lemon juice, cinnamon, nutmeg, and a generous amount of ginger. Melt butter in your cast iron skillet and add in apples. Saute apples for 5 minutes until almost tender. Stir in sugars and cook about 5 more minutes until thick and apples are tender. Combine sugar cookie dough and rolled oats. Place tablespoonfuls of dough evenly on top of apples and bake. When ready to serve, drizzle top with salted caramel sauce, whipped cream or ice cream. You can serve the cobbler warm or at room temperature. Pure heaven and delicious, ridiculousness awaits and if you don’t believe me, get in the kitchen now.

Sugar Cookie Apple Ginger Cobbler with Salted Caramel Drizzle

 

Sugar Cookie Apple Ginger Cobbler with Salted Caramel Drizzle

4 T. unsalted butter

4 large Granny Smith apples, peeled and diced

Juice of 1/2 lemon

1 t. vanilla extract

2 t. kosher salt

1 ½ t. ground cinnamon

1/4 t. ground nutmeg

2 ¼ t. ground ginger

1/3 cup dark brown sugar

1/3 cup granulated sugar

1 roll (16 oz.) refrigerated sugar cookie dough

3/4 cup rolled oats

Store-bought or homemade salted caramel sauce

 

Heat oven to 350 degrees. In a large bowl, combine diced apples, lemon juice, vanilla, salt, cinnamon, nutmeg, and ginger.

In a 10-inch cast iron skillet, melt butter. Add in apple mixture and cook for 5 minutes until apples begin to soften and release their juice.

Add in sugars, stirring to combine, and cooking apples for an additional 5 minutes until caramelized and thickened. Remove apples from heat.

In a food processor, break up cookie dough into chunks and add in rolled oats. Pulse several times until combined.

Drop by tablespoonfuls evenly on top of apples. Bake for 25-30 minutes or until cookie topping is golden brown and bubbly.

To serve, spoon cobbler into serving dishes. Drizzle with warm salted caramel sauce and top with whipped cream or vanilla ice cream.
