Quick, easy, and delicious is a must as I do not want any one to be disappointed after a fabulous meal. My Sugar Cookie Cherry Cobbler is just the dessert to end a fantastic meal and it’s perfect for sharing with friends and family. Need I say anymore? That said: Who doesn’t love a good dessert? I’m not a huge sweet eater but I grew up in a family where dessert was king. My Dad needed to have something sweet after every meal and my Mom was happy to oblige him. All the men in my family love sweets. So what makes Sugar Cookie Cherry Cobbler so special? Okay, it’s super easy to make as it’s made in one pan, a cast iron skillet to be exact. Cast iron is such a versatile piece of cookware that no kitchen should be without one or two. Second, this dessert goes from stove to oven in minutes. Have I got your attention? To start, melt butter in the skillet then add in cherries with sugars, vanilla, juice and salt. Cook cherry mixture for about 10 minutes or until sauce begins to thicken. Don’t cook until sauce disappears as you will want the juice so the cobbler is not dry. Now mix cookie dough with rolled oats. I use a food processor for this but a pastry blender works to if you like. Drop tablespoonfuls of dough atop cherries and bake in heated 350 degree oven for 25 minutes or until cookie crumble is golden brown. Look at that; you’ve just created a jaw-dropping, spoon-licking dessert. Grab some whipped cream or vanilla ice cream and game on.

Sugar Cookie Cherry Cobbler

4 T. unsalted butter

4 cups frozen cherries, thawed and reserving juice

1/2 cup granulated sugar

1/4 cup dark brown sugar

1 t. pure vanilla extract

3/4 t. kosher salt

1 – 16 oz. package refrigerated sugar cookie dough

3/4 cup rolled oats

 

Heat oven to 350 degrees. In a 10-inch cast iron skillet, melt butter over medium-high heat.

Add cherries and reserved juice and cook for 5 minutes. Stir in sugar and salt, cooking for 10 minutes until juice is reduced. Remove skillet from heat.

In a food processor, pulse cookie dough and rolled oats until just combined.

Drop cookie dough mixture by Tablespoon portions on top of cherries, covering the entire top evenly.

Bake for 25 minutes or until cookie topping is golden brown.

Serve warm or at room temperature, topped with vanilla ice cream or whipped cream.
