“Bourbon Butterscotch Blondies”

It’s Sunday football and I’m finalizing my holiday baking list. As I prep my list, I’ve realized I have a great recipe to share with you. I baked my Bourbon Butterscotch Blondies for coworkers several weeks ago. These bars are chewy and crunchy with a caramel taste infused by butter, smoky bourbon and butterscotch. Perfect for a midday treat with a cup of joe. As my coworkers as they will agree.

Leave Out The Bourbon For Kids and Use Maple or Rum Extract Instead

Yes, these bars have bourbon and the addition will light up your kitchen. Most liquor (alcohol) will evaporate from food when cooked yet the taste that is left behind takes most anything to the next level. I enjoy using wine in cooking foods but whiskey, bourbon, rum, and brandy in baked goods is a game changer.

Buttery, Sweet, Chewy, Crunchy Texture

If you are serving these blondies to kids, I suggest leaving out the bourbon and using a bit of maple or rum extract instead. No alcohol and ensure safe eating for kids. Kids with love these blondies especially when you cut them in bite size squares. One for each hand, ha…ha…ha!

Totally Addictive!

This recipe is perfect for baking last minute when the you or the family is looking for a sweet treat. It’s easier than baking up a batch of chocolate chip cookies. I’d say they take about 45 minutes from start to finish. Now that’s what I call a keeper recipe. If you have older children who love to be in the kitchen. I find this a great starter recipe. Get your grocery list together and start baking. Happy Baking!

 

Bourbon Butterscotch Blondies

2 cups unbleached all-purpose flour

2 t. baking powder

1 t. kosher salt

2 cups packed light brown sugar

2 large eggs

1/2 cup unsalted butter, melted

4 T. whole milk

2 t. vanilla extract

1 cup butterscotch chips

4 T. bourbon

 

Heat oven to 375 degrees and line a 13×9-inch baking pan with parchment paper.

In a large mixing bowl, whisk together flour, baking powder, salt, and brown sugar.

Using a small mixing bowl, whisk together butter, milk, vanilla, and eggs until combined.

Combine wet ingredients into dry ingredients.

Add in butterscotch chips and bourbon, stirring until flour is absorbed.

Press batter into prepared baking pan.

Bake for 20 minutes or until toothpick inserted comes out clean.

Cool on wire rack for at least 30 minutes. Remove from pan and cut into bars.

 

Makes 24 bars.
