“Buttermilk Cheez-It Chicken”

Recently I had a week that I’d love to do over. I received medical news about a family member that was devastating this past week. Seems like 2020 will not behave and give any of us a break. However, I do feel blessed no one in my family has had covid and have stayed healthy. In the meantime, I go to my happy place to regroup, recharge and thank God for cooking and baking. This day childhood memories bring you my Buttermilk Cheez-It Chicken.

Tender, Crunchy, Cheesy and Deliciously Simple

As a kid, I remember my Mom preparing this chicken recipe whenever my sister and I asked. I will say that was pretty often. It’s quick, easy not to mention delicious and kids love this chicken too. Crunchy on the outside with that coating of cheesy cracker crumbs. Underneath you have tender chicken that has been marinated in buttermilk. The buttermilk gives the chicken a tangy infusion of goodness.

When ready to bake the chicken you can option to drizzle chicken with melted butter. I suggest using the butter for extra flavor. One thing I recommend is slicing or pounding breast if they are real thick so to cook evenly. I do look for smaller breast for this very reason as well as thicker breasts tend to be on the tough side. Not very appetizing…

This chicken is perfect when needing a speedy dinner especially right now with the holidays around the corner. Enjoy this crunchy, cheesy, tender chicken with any of your favorite sides you and your family love. I hope this recipe sparks some childhood memories and I’ll bet the recipe goes in your meal plan rotation. Some recipes just never get old. Enjoy!

 

Buttermilk Cheez-It Chicken

6 boneless, skinless chicken breast halves

1 cup buttermilk

1/2 t. kosher salt

1 ½ cups crushed Cheez-It crackers

Salt and black pepper to taste

2 to 3 T. unsalted butter, melted

 

Pour buttermilk and salt into a large Ziploc bag and add chicken. Close bag and allow chicken to marinate 3 hours to overnight. The longer the better.

Heat oven to 375 degrees and spray a baking sheet with non-stick cooking spray. Non-stick foil can also be used without using spray.

Place crushed crackers in shallow dish. Remove chicken from marinade and sprinkle with salt and pepper.

Coat each chicken breast with crushed crackers and place on prepared sheet. Drizzle melted butter on chicken.

Bake 30 to 40 minutes or until inserted instant read thermometer registers 145-150  degrees. Size of chicken breast will determine cooking time.

 

Makes 6 servings.
