Beginning with this post, I’ll be posting new recipes by theme or ingredient at least twice a week. Sounds like a fantastic plan. YAAAS!

This week’s new recipes will feature easy breakfast or brunch pastry treats with items you may already have on hand. You’ll still find useful product links to certain ingredients I use. Some ingredients can be found in your local market while others may require an online purchase.

How about a little story behind these pastry bites! Plain and simple, the final product was not how these treats were to look like. The taste was fabulous as I love the flavor of cardamom. Just like cinnamon, a little goes a long way.

I received a phone call while making these pastries the first time. Of course, when I returned my dough was warm and extremely hard to work with. The smart thing to do was to place dough in refrigerator to chill again. Yet, NO I just kept going.

Instead of spiral rolls because I couldn’t roll them, I made it through cutting the log into long layered strips and I decided to cut the dough differently. I cut the strips in half then in half again, folded each stack of layered strips in half and placed them in a muffin tin.

When baked, the pastries look like fans all flaky and golden brown plus they peel apart. Ha, fun in the morning.

So, I decided to keep my mistake recipe because no matter how you wrap them, let’s just say flaky layers of sticky-sweet, buttery bites are worth every effort. Not a fan of cardamom, try cinnamon sugar instead.

You never knew breakfast could taste so good

Try these 4 baking tips for success before getting started:

  1. Ensure your puff pastry is thawed and kept in the refrigerator until ready to use.
  2. Have all your ingredients prepped and ready before starting. No stopping in between is allowed.
  3. Use a very sharp knife when cutting the dough. A dull knife spells disaster. Just saying’!
  4. Allow pastries to chill before baking in preheated oven.

Work fast while dough is cool and your log is rolled tight

Let’s begin this easy recipe by rolling puff pastry to 1/8-inch-thick rectangle. Depending on brand of pastry will determine the size of your rectangle. There is no absolute measure in making the recipe as you can shape your dough how desired. My recipe is your guide.

Once dough is rolled out on a lightly floured surface, spread softened butter over entire surface of dough. Sprinkle with cardamom sugar and roll dough into a log starting on long edge. Cut log in half lengthwise then cut long strip in half on short side and in half again. You will have 8 layered stacks.

Sure to be a new favorite breakfast treat

Fold each layered stack in half and place in a muffin tin sprayed with non-stick cooking spray. Place tin in refrigerator to chill. Bake in 350 degree oven for 30 minutes, covering with foil browning to quickly. Let pan rest on wire rack for 10 minutes. Remove pastries from pan, running a knife around edges. Roll pastries in remaining cardamom sugar and serve.

The bottoms make these pastries truly enjoyable because of the buttery sugary crisp texture. You’ll love this mistake recipe as much as I do. A little goofy, yes! But the results will have you or anyone who eats them wanting at least one more. Happy baking and a great start to your week.

Cardamom Sugar Pastry Bites

1 sheet of puff pastry, rolled to 1/8-inch-thick rectangle

4 T. unsalted butter, softened

1 cup granulated sugar

1 ½ T. ground cardamom

 

In small mixing bowl, combine granulated sugar and cardamom. Set aside. Heat oven to 350 degrees.

On a lightly flour surface, roll puff pastry into 1/8” thick rectangle. You want the dough to be thin without tearing.

Spread pastry with softened butter in a thin layer covering entire surface.

Sprinkle butter layer with 4 T. sugar mixture.

Start roll on long side into a tightly rolled log. Cut the log lengthwise then cut each lengthwise piece in half and in half again on short side. Keep layers together; don’t separate. You should have 8 layered pastry layers.

Fold rectangle layers in half and place in muffin tin sprayed with non-stick cooking spray. Chill pastry bites for 20 minutes.

Bake for 30 minutes or until nicely browned and bubbly. Cover tops with foil if pastry is browning to fast.

Allow pastry to rest for 10 minutes on wire rack. Run knife around edges of pastry to remove from pan. Roll in additional cardamom sugar and serve.

 

Makes 8 pastry bites.
