“Cherry Almond Pastry Rolls”

Another easy breakfast/brunch treat! The third of my posts, using puff pastry dough to make quick and simple treats in a flash so to speak. The Cherry Almond Pastry Rolls are just as easy and delicious as my Cardamom Sugar Pastry Bites and the Boysenberry Puff Pastry Rolls.

No need for anything fancy, just pastry dough, butter, cherry jam and chopped almonds. The rolls can be drizzled with cherry glaze if you desire, however you may decide it is not needed. Flaky, buttery, not overly sweet, cherry jam, crunch of almonds and rolled in sugar. They’re scrumptious anyway you desire. Ready for a happy dance? YAAAS!

Not all recipes need be complicated and long-drawn out. Long cooking needs to be planned out or scheduled. Sometimes you forget a few simple ingredients will make a masterpiece fancy enough to serve guests. These flaky, buttery-sweet cherry almond treats fit the bill.

Puff pastry dough is one of the easiest store-bought items you can buy to make both sweet and savory treats. Dough can be cut into any shape, and filled with what you like. Brands vary so keep looking for one you love and you’re good to go.

You’ll never look at puff pastry in the same way again.

Start this recipe with chilled pastry dough on a large flat surface. Roll your dough to 1/8-inch-thickness.

Spread softened butter over entire surface of pastry dough. Proceed with spreading cherry jam over butter layer and then sprinkle on chopped almonds.

Roll pastry, starting on long edge into a log. Cut log into 10 slices and place rolls cut side up in sprayed muffin tin. Then chill rolls for 20 minutes before baking.

Sprinkle tops with granulated sugar. Bake for about 30 minutes until golden brown. Cool rolls in pan for 10 minutes before serving. Cool rolls a little longer if using cherry glaze then serve.

Incredibly easy and scrumptious

These cherry almond rolls will put happy smiles on some faces. Nothing is better than something homemade in the morning, not to mention brunch with family or friends. If cherry jam is not your thing, you can use another flavor of jam or use pecans or walnuts. Be sure to finely chop the nuts.

Have some fun in your kitchen in the morning and bake up a batch or two real soon. Although best served the same day, the rolls will be good for another couple days in an airtight container. I think this recipe will work for you and your imagination. Get to baking, people!

Perfect weekend baking project

 

Cherry Almond Pastry Rolls

1 sheet puff pastry dough, thawed and kept chilled

3 T. unsalted butter

1/4 cup cherry jam, or more if needed

3 T. finely chopped almonds

Granulated sugar, for sprinkling and rolling

Cherry glaze, for drizzling (recipe follows), optional

 

Heat oven to 350 degrees. Spray a muffin tin with non-stick cooking spray and set aside.

Unroll chilled dough on cutting board on lightly floured surface. Roll dough into 1/8-inch-thick rectangle. Spread dough with butter over entire surface of pastry dough.

Next, spread cherry over butter layer and sprinkle jam with chopped almonds.

Starting with long edge of dough, begin rolling dough into a tight log.

Cut dough into 10 slices. Place rolls cut side up in a muffin tin sprayed with non-stick cooking spray. Chill pan in refrigerator for 20 minutes.

Sprinkle tops with granulated sugar and bake for 30 minutes until golden brown. Cover with foil if browning too fast.

Remove pan from oven and place on wire rack to cool 5 minutes.

Run knife around edges, remove and serve. Allow rolls to cool a few minutes longer if using cherry glaze.

Best served the same day baked but rolls can be stored another couple of days in an airtight container.

Cherry Glaze:

1/2 cup confectioners’ sugar

1 T. cherry syrup

1 T. milk

Whisk together ingredients in a small bowl until smooth. Drizzle glaze over pastries and serve.

 

Make 10 pastry rolls.
