“Charred Tomato Jalapeno Salsa”

Salsa has got to be one my husbands favorite snacks. Look at your grocery store shelves. Is there anywhere you can’t find salsa? But don’t you have a craving for one you can make in your own kitchen? You can create your own flavors with ingredients you and your family love. I love anything with a char taste…not burnt but a smoky flavor. Well, I’ve got you covered. Charred Tomato Jalapeno Salsa will provide your taste buds with that smoky flavor of tomatoes, the heat of jalapenos and the tang of lime. Let Charred Tomato Jalapeno Salsa chill completely before serving with Tortilla chips and a classic Margarita or your favorite Mexican beer. Perfect for enjoying with friends since baseball season is just around the corner. Use this salsa for a fantastic topping on tacos, burritos and grilled salmon or broiled tilapia.

Charred Tomato Jalapeno Salsa

8 plum tomatoes, halved and charred

2 jalapenos, tops removed

1 small red onion, small diced

1/3 cup cilantro, chopped

2 garlic cloves, finely minced

2 T. lime juice

1 t. salt

1/2 t. pepper

Place halved tomatoes on a jelly roll pan, cut side up. Place jalapenos on pan with tomatoes. Place your pan under broiler at 500 degrees. Rotate pan to broil evenly if necessary until tomatoes are charred on top. Turn jalapenos while broiling. Do not burn. This process may take about 10 minutes depending on your oven. Remove pan from oven and let tomatoes cool down, about 15 minutes. Remove seeds from jalapenos if you want a milder salsa.

To make salsa, add all ingredients to a blender or food processor and pulse to desired texture. You can also chop tomatoes and jalapenos by hand; mix all ingredients together in a large bowl for a chunkier salsa. My favorite!

Serve salsa with tortilla chips. Refrigerate leftovers.
