“Five Easy Summertime Cocktails”

Welcome to Summer and since the 4th of July is a couple of days away, so shake up one or all of my Five Easy Summertime Cocktails. Sitting in the backyard or around the kitchen table, make all your guests feel welcome. Everyone take a load off and enjoy a refreshing cocktail. Sounds like a plan to me. Each recipe is for one cocktail but you can increase the volume as needed to set up a cocktail bar if you like.

Five Easy Summertime Cocktails

Nothing adds life to a party like a good libation and these recipes will cure whatever ails you. Each is served in glasses you may already have in your cabinet and some of the ingredients you may have. The only ingredient which may be difficult to find is the hibiscus syrup but is easy to make and can be done so days ahead and kept refrigerated until needed. Click here for a homemade hibiscus syrup recipe. World Market carries this delicious versatile syrup but not all the time.

Coconut Dream – Five Easy Summertime Cocktails

The first cocktail is my Coconut Dream, creamy coconut based with a kick of Tequila and a sprinkle of nutmeg on top. Dreamy and creamy on a hot summer day.

Hibiscus Sunrise – Five Easy Summertime Cocktails

My second cocktail is Hibiscus Sunrise. Limoncello and hibiscus syrup are an unbelievable combination. Serve this cocktail in chilled martini glasses. This cocktail is perfect for after dinner because of its sweetness. You can also make this cocktail in a tall glass and  top with club soda served over ice.

Blue Co-Cello – Five Easy Summertime Cocktails

Third cocktail is Blue Co-Cello because its blue and made with a favorite, Limoncello. Limoncello is lemony deliciousness on its own but makes fabulous cocktails, too. Serve in chilled martini glasses for a true bit of tropical summer in a glass.

Hello Cello – Five Easy Summertime Cocktails

The fourth cocktail, Hello Cello will make you feel like you should be on a beach somewhere. This is the “It’s Five O’clock Somewhere Cocktail” for the summer. Fizzy and delightful! Serve in stemless red wine glasses and enjoy!

Pomegranate Bourbon Cooler – Five Easy Summertime Cocktails

My fifth and final cocktail is Pomegranate Bourbon Cooler. Serve in a tall glass and no shaker is needed. This recipe would be great served from a pitcher and pour over ice. You can substitute cranberry juice or another favorite when making this cocktail. You be the judge and cheers to all. Have a fantastic holiday!

Coconut Dream

1 oz. coconut rum

1 oz. heavy cream

1 oz. unsweetened coconut milk

1 oz. Tequila

1/2 t. vanilla extract

Ground nutmeg, for garnish

Fill a cocktail shaker with ice and add all ingredients except nutmeg. Pour cocktail in an old-fashioned glass, sprinkle with ground nutmeg, and serve.

 

Hibiscus Sunrise

2 oz. Limoncello

1 ½ oz. store-bought or homemade hibiscus syrup

Club soda, optional

Chill martini glass while making cocktail.

Fill a cocktail shaker with ice and add in Limoncello, and syrup. Shake about 20-30 seconds or until shaker becomes frosty. Pour cocktail into chilled martini glass. Note: Club soda can be added if cocktail is too sweet for your taste but serve in tall glasses filled with ice.

 

Blue Co-Cello

2 oz. coconut rum

1 oz. Limoncello

1/2 oz. Blue Curacao

Juice of 1/2 lemon

Chill martini glass while making cocktail.

Fill a cocktail shaker with ice and add in rum, Limoncello, Blue Curacao, and lemon juice. Shake about 20-30 seconds or until shaker becomes frosty. Pour cocktail into chilled martini glass.

 

Hello Cello

2 oz. Limoncello

1 oz. Bullet Bourbon Whiskey

Juice of 1/2 lemon

Ginger Beer

Lemon slice, for garnish

In a cocktail shaker filled with ice, add Limoncello, whiskey, and lemon. Shake 20-30 seconds or until shaker becomes frosty. Pour cocktail into a stemless red wine glass. Top with ginger beer and garnish with lemon slice, if desired.

 

Pomegranate Bourbon Cooler

2 oz. bourbon

1/2 oz. apple brandy

Juice of 1/2 lime

4 oz. pomegranate juice

Lime slices and maraschino cherries, for garnish

Fill a tall glass half full of ice. Pour in bourbon, brandy, lime juice, and pom juice. Gently stir and add more ice if desired. Garnish with a lime slice and a cherry.
