“Fresh Mango Salsa”

Can’t get enough of summertime fruits? Me neither as I’m always looking for ways to mix up flavorful easy dishes for weeknights and weekends. Furthermore, who doesn’t love to snack watching a favorite TV show or plugging away at the computer pumping out recipes for my blog? That’s how I came up with my own version of Fresh Mango Salsa. Mango Salsa can be found in your local market but I find there is always too much of one thing and not enough of another. Making your own version you get all the flavors you like. Use my recipe as a guide to making your own version of Fresh Mango Salsa.

Fresh Mango Salsa

Start with fresh ripe mangoes as these beauties are really sweet right now and perfect in this recipe. Choose mangoes free of soft spots and bruising but firm to the touch. Plum tomatoes are definitely in season and are wonderful in this salsa. Use colorful bell pepper like orange or red because of their sweetness. You can use green pepper if you like but I find green pepper to be bitter in this salsa. Shallots are used because mild onion flavor is what you’re looking for. Jalapenos add a spicy heat in each bite. For this recipe I removed the seeds to minimize the heat. Feel free to leave them in if you like the heat.

Cilantro lends an herbal note and freshness to my Fresh Mango Salsa. The juice of two limes is squeezed in for a pop of freshness and a bit of citrus twang. last but not least Chile lime salt is added to incorporate seasonings contained in the salt. It’s just the right amount of added flavor. I love Tajin brand but sometimes I will make my own Chile lime salt if I’m not in a hurry. Look for Tajin Classic Seasoning at your local market.

Mix all ingredients in a large serving bowl and allow to chill in refrigerator before serving. Break out your favorite tortilla chips for dipping or serve on top grilled, baked or broiled salmon. Perfect combination in my book. I make Fresh Mango Salsa all summer long because it’s on the healthy side of snacking. Eat the chips in moderation and no reason to feel guilty. Fresh and delicious is what I’m talking about. Head to your local market to gather all ingredients and bring this salsa to your next neighborhood barbecue or workplace potluck. I promise everyone will be asking for the recipe and you’ll ask yourself what took you so long to make such an easy salsa recipe.

Fresh Mango Salsa
Refreshing – Fresh Mango Salsa

 

Fresh Mango Salsa

3 fresh ripe mangoes, peeled and diced

2 plum tomatoes, chopped

1 orange or red bell pepper, seeded and diced

2 shallots, finely diced

2 – 3 jalapenos, seeded and finely diced

1/3 cup cilantro, roughly chopped

Juice of 2 limes

1 t. kosher salt or to taste

1/2 t. Chile lime salt (Tajin brand) or to taste

In a large mixing bowl, stir together all ingredients. Adjust salt to taste, if necessary. Let chill in refrigerator at least 2 hours before serving so flavors blend together. Serve with your favorite tortilla chips or as a delicious topping for baked, broiled or grilled fish.
