“Giant Sugar Cookies”

Feeling a bit caged in right now, stuck in one place far too long? Well, if you’re watching the news updates each day you know we’re in this for the long haul. However, it doesn’t mean you can’t have some fun while being confined to our living quarters. That doesn’t mean once you’ve worked I’m assuming from home if you can or helped the kiddos get their school work completed life stops. If you and the kids are restless, I have a yummy kitchen project for them. Bake up a batch of Giant Sugar Cookies where fun can be had by all.

Buttery, Crisp Edges, Chewy Middle

First, what makes these so special is the taste of butter with crunchy edges and a chewy middle. Second, the recipe only makes 6 giant cookies which will definitely put smiles on the kids faces when they see how big the cookies will be. Third, from mixing to baking takes about 30 minutes. That’s a winner in my book. Lastly, have a few varieties of sprinkles and coarse sugar for decorating the cookies. Create some sweet memories during these crazy times.

When I found this recipe I was looking for a recipe that made a small batch along with something to share with all the restless souls at there. Trust me I’m right there with each of you. As you know I love a good cookie and this one has everything I love so I have no doubt this recipe is about to become one of the most requested family treats. You should have everything in your pantry already to bake up a batch or two.

Super Fun For The Kids To Bake So Have Plenty of Decorations On Hand

As I’m typing this post, I understand and feel somewhat isolated, have a bit of cabin fever, and feeling a bit uncertain of what’s to come. My Mom always said and this too shall pass. I have faith that this virus will move along and we’ll be better for all we have endured. Patience and faith.

That’s what we have to remember and say a prayer for all those who have been hit the hardest. But most importantly, we must remember all the first responders putting their health at risk 24 hours a day to help at risk. God Bless to each of my fellow foodies! Now get in the kitchen for some baking fun.

Giant Sugar Cookies
Use Sprinkles or Coarse Sugar or Leave Them Plain

 

Giant Sugar Cookies

1/2 cup (1 stick) unsalted butter, softened

1 cup granulated sugar

1 large egg

1 1/2 cups all-purpose flour

1 1/2 t. baking soda

2 T. cornstarch

1/2 t. kosher salt

Sprinkles or coarse sugar, for sprinkling (optional)

 

Heat oven to 350 degrees and line two cookie sheets with parchment paper; set aside.

In a large mixing bowl, use a wooden spoon to combine butter and sugar. Stir until mixture is smooth. Add in egg and mix well.

Stir in flour, baking soda, cornstarch, and salt until well combined.

Divide cookie dough into 6 equal size dough balls. Place 3 balls on each cookie sheet equal distance apart so cookies have room to spread. Slightly flatten dough balls then sprinkle and press sprinkles or sugar into top of cookies.

Bake cookies for 14 – 15 minutes until lightly brown around edges. The cookies will be soft when removed from oven so allow to rest 5 minutes to firm up. Remove cookies to cooling rack to cool completely.

Makes 6 giant cookies.
