“Glazed Turkey Meatloaf”

When I was a kid, one of my favorite meals my Mom made was meatloaf. But when she passed away, my Dad was craving her ground turkey meatloaf. Mom began using ground turkey instead of ground beef for a healthier spin. My challenge in finding the perfect recipe came to an end with “Glazed Turkey Meatloaf.”

Glazed Turkey Meatloaf

Using ground turkey in place of ground beef works quite well in most recipes. Your ground turkey should consist of both white and dark meat turkey to limit dryness and improve texture. All white meat ground turkey can become dry and tasteless. Some fat should be added to ground turkey to improve its flavor profile.

As with my Glazed Turkey Meatloaf, chopped mushrooms are added to create a moist, flavorful loaf. Mom you would be so happy because Dad makes this meatloaf for himself. He absolutely loves this recipe. In this recipe, you saute all your vegetables and let them cool before adding to your meat. The meatloaf is held together with your usual eggs and milk then glazed with ketchup for a special sweet touch. My Glazed Turkey Meatloaf is moist, flavorful and the leftovers makes great sandwiches for lunches. Even your kids will gobble up this meatloaf. Glazed Turkey Meatloaf with Green Onion Mashed Potatoes

Glazed Turkey Meatloaf

1 t. Olive oil

1 1/2 cups chopped onion

1 T. chopped garlic

1 medium carrot, grated

3/4 pound Cremini (Baby Bellas) mushrooms, chopped

1 t. salt

1/2 t. black pepper

1 1/2 t. Worcestershire sauce

1/3 cup fresh parsley, chopped

1/4 cup plus 1 T. ketchup (2 T. reserved for top)

1 cup fine bread crumbs

1/3 cup milk

1 egg plus 1 egg white, beaten

1 1/4 pounds ground turkey

Preheat oven to 400 degrees. In a large 12-inch skillet, heat olive oil over medium heat. Add onion, garlic, carrot, and mushrooms. Sauté vegetables until no liquid remains, about 15 minutes. Stir in salt, pepper, Worcestershire sauce, parsley, 3 T. ketchup and bread crumbs until well combined. Remove from heat and let cool.

Meanwhile, in a small bowl, whisk together egg, egg white and milk. Spray bottom of 13×9 baking dish with non-stick cooking spray.

In a large mixing bowl, add ground turkey, vegetable mixture and egg mixture. Mix until well combined. Add meatloaf mixture to baking dish, forming into a loaf shape. Your meatloaf mixture will be soft so don’t think you may have mixed something incorrectly. It’s just the nature of this recipe. Place in oven and bake for 50 to 55 minutes.

Brush top of meatloaf with reserved 2 T. ketchup after 40 to 45 minutes of baking to form a glaze. Remove from oven; let rest 10 minutes before serving.

Serve with my Creamy Green Onion Mashed Potatoes and your favorite brown gravy. Don’t forget a green vegetable to go along side.
