Who doesn’t love mashed potatoes? I serve these Green Onion Mashed Potatoes with my Glazed Turkey Meatloaf (click here). However, these mashed potatoes can be made and served with anything you please. Go ahead I dare you. You might just find yourself with just a bowl of potatoes for dinner. These potatoes are spectacular; so rich and creamy because cream cheese is added while mashing the potatoes. Of course, you have the butter and cream. Even the skin is left on these potatoes. Then green onions are added for a savory punch of flavor and unexpected texture. Give Green Onion Mashed Potatoes a spin the next time you’re having meatloaf, Salisbury Steak, or pot roast. Don’t forget the gravy.
Green Onion Mashed Potatoes
Green Onion Mashed Potatoes
2 to 2 1/2 pounds red skin potatoes, unpeeled and cubed
1/4 cup (4 T.) butter
8 oz. pkg. cream cheese, softened
Half & half or heavy cream
6 green onions, chopped
Salt and pepper to taste
In a large pot, cover potatoes with water; add 1 t. salt. Over high heat, bring potatoes to boil and cook until fork tender. Remove from heat and drain potatoes; return potatoes to pot. With a potato masher or hand mixer, mash together potatoes, butter and cream cheese. Add in half & half or cream a little at a time to reach desired consistency. Stir in green onions. Add salt and pepper to taste.
Serve warm, plain or top with your favorite gravy.
