It’s Wing Wednesday and I’ve got a fantastic recipe to add to your wing recipe collection. Inspired by my sister, these Grilled Chicken Wings with Gorgonzola Dipping Sauce are the bomb. I love wings as much as the next person yet I’m always looking to create a new flavor combination. Not all wing recipes need to have a dipping sauce but these must have a sauce.

This recipe starts with a marinade if you will by combining oil, lime juice and zest, garlic, fresh cilantro, sambal oelek, sweet paprika, chili powder, salt and pepper. Marinate the wings at least 2 hours yet I prefer overnight. Not hot or overpowering but just right. Fire up your grill and cook away. Be sure to get some char on those wings as my sister recommends.

I do recommend trying to find small wings as the bigger the wings are the more tough and not as tender. Bigger ones also have a hard time getting the char. I’m all bout grilling perfect here not just okay wings. Now let’s talk about the dipping sauce. The lime in the wings is a perfect pairing.

When I first created this recipe my sister said you have to make sauce. She gave me a list of ingredients so I played around until it was just right to my taste. You can play around with flavors for yourself if desired. Be sure to use Gorgonzola because of the mildness. Danish blue or other blue cheeses are too strong.

Savory with a slight sweetness and fresh cilantro is killer and I bet you’ll find another use for this sauce. Last but not least, the kids will love these wings. Go ahead, get your grill on and have a great Wednesday. Stay Safe!

 

Grilled Chicken Wings with Gorgonzola Dipping Sauce

Wings:

3 pounds chicken wings, drummie and wingettes

2 T. vegetable oil or other neutral oil

4 t. fresh lime juice

3 t. lime zest

1 T. minced garlic

2 t. dried cilantro or 2 T. fresh cilantro, chopped

2 1/2 t. sambal oelek or sriracha

1 1/2 t. Hungarian sweet paprika

2 t. chili powder

1 t. kosher salt

1/2 t. ground black pepper

Gorgonzola Dipping Sauce:

1 cup mayonnaise

1 cup sour cream

6 oz. Gorgonzola cheese, crumbled

1 to 2 T. fresh cilantro, chopped

1 T. Worcestershire sauce

1/4 to 1/2 t. fine sea salt

1/4 t. ground black pepper

 

Place chicken wing pieces in a large Ziploc bag.

In a small mixing bowl, combine oil, lime juice, zest, garlic, cilantro, sambal, paprika, chili powder, salt, and pepper.

Pour marinade over chicken wings. Squeeze air from bag and seal. Massage bag to coat wings completely in marinade. Turn bag occasionally.

Refrigerate wings for at least 2 hours to overnight. Remove wings from marinade and allow to drain before grilling.

Prepare grill according to manufacturers’ instructions, brush grates with oil, and maintain heat at 350 degrees.

Place wings on grill and cook for 12 to 15 minutes, depending on size and until inserted instant read thermometer reads 165 degrees. Allow wings to rest 5 minutes before serving with dipping sauce.

To make dipping sauce, combine mayonnaise, sour cream, and cheese. Next, add in cilantro, Worcestershire, salt and pepper. Refrigerate 1 hour before serving with wings.

 

Makes 6 to 8 servings.
