What to cook for dinner? That is the $1 Million dollar question I was looking to answer on this day off. While working a full-time job, I like many of you struggle with same question. So I went to my local market’s meat case and I of course found the usual like steaks, pork chops, sausages, and chicken. But I thought, what can I do with this beautiful pork roast in the case? Finally, my choice was made because I was thinking nothing tastes or smells like pork being cooked on the grill. The smell is absolute heaven and nothing can be more flavorful when cooked to perfection. So enter, Grilled Pork Loin Roast with Maple Mustard Glaze. Lord, let me tell you this dynamic piece of meat is prize-winning in appearance and not to mention in flavor.

First of all, I had prepared this roast in the oven during the winter but when I saw the roast this particular, how would this be cooked on the grill low and slow? Cooking large pieces of meat on the grill do not scare me and should not scare you either. The trick is definitely not cooking large pieces as you would say chops or steaks. These pieces are meant for fast cooking over direct heat while roasts are meant for low, slow, indirect cooking. Grilling in this indirect manner allows meat to cook from the inside out, giving you tender, moist meat.

Pork is a family favorite so this recipe is a no-brainer. The star is the Maple Mustard Glaze smeared over this roast. Simply mince shallot, garlic and mix with spicy brown mustard, maple syrup, and brown sugar. Cover roast in glaze because it’s a marinade as well. Marinate pork for at least 4 hours but even better if left over night. Remove roast from refrigerator at least 30 minutes before grilling. This is the time to heat up your grill, turning off all burners except one. Reserve marinade to brush on roast while grilling. Baste during grilling but remember to give last brush of glaze about 10 minutes before removing from grill. Discard any leftover marinade at this point.

Grilled Pork Loin Roast with Maple Mustard Glaze

One – 3-pound pork loin roast

1/4 cup spicy brown mustard

1/4 cup pure maple syrup

2 T. dark brown sugar

2 garlic cloves, finely minced

1 shallot, finely minced

1 t. each kosher salt and ground black pepper

 

In a small mixing bowl, combine mustard, maple syrup, brown sugar, garlic, shallot, salt, and pepper.

Place pork loin in a gallon-size Ziploc plastic bag. Pour in marinade, close and massage to coat meat completely.

Refrigerate pork for at least 4 hours to overnight. Bring pork to room temperature 30 minutes before cooking.

Heat grill to 350 to 400 degrees to cook pork over indirect heat. Only one burner should be left on.

Place pork roast in a foil pan, moving away from burner that is left on.

Grill pork roast 1½ to 2 hours or until instant read thermometer registers 145 degrees. Do not check temperature before the 1½ hour mark.

Remove pork from grill, tent with foil, and allow to rest for 10 minutes before slicing.
