How much do you love steak? Rejoice all meat eaters and grill masters in your life. With Father’s Day around the corner I just had to share. My husband and I recently celebrated our wedding anniversary. The restaurant where we had dinner served a fabulous steak, a boneless Prime Ribeye topped with a herb butter. I knew right away that at first chance I had to recreate the butter that appeared on my steak. The dollop was melting and I could see the butter was filled with fresh herbs. I was picking that butter apart trying to see what herbs were used. So, my creation became Grilled Ribeye Steaks with Roasted Garlic Herb Butter.

Steaks are one of my favorite meats to grill because of how easy these little darlings cook up. Second, they have so much flavor if good quality with so little effort. A good steak only needs a generous shake of salt and pepper. While there are some good rubs and seasonings like coffee rubs, try your hand at making your own. I have my favorite rubs from places like Penzeys or from grill masters, Weber on Amazon. Due to flavor coming from the herb butter, use simple salt and pepper. You don’t want anything taking away from that buttery flavor.
Grilled Ribeye Steaks with Roasted Garlic Herb Butter
To make the herb butter, roast your garlic first. Cut top off garlic bulb, not root end, place on foil, and drizzle bulb with Olive oil. Roast in a 400 degree oven for about 30 to 35 minutes un til soft. Remove from oven to cool until it can be handled. In a small bowl, add one stick of softened butter. squeeze garlic from bulb, and stir in fresh herbs. Mix until well combined. Wrap butter in plastic wrap and refrigerate for 30 minutes or until firm. It’s easy to make herb butter so experiment and come up with your own combinations. Herb butters also freeze extremely well for use later.

Grill your steaks until desired doneness is achieved and top steaks with a slice of butter. Watch these Grilled Ribeye Steaks with Roasted Garlic Herb Butter disappear. Grilled Ribeye Steaks with Roasted Garlic Herb Butter
Grilled Ribeye Steaks with Roasted Garlic Herb Butter
Two – 16 oz. bone-in Ribeye steaks, at least 1-inch thick
Sea salt and pepper to taste
2 t. Olive oil
1 whole garlic bulb
1/2 cup salted butter (1 stick), softened
1 T. fresh oregano, minced
2 t. fresh rosemary, minced
1 T. fresh chives, minced
To prepare herb butter, heat oven to 400 degrees. Cut off top of garlic bulb to expose cloves. Place garlic in piece of aluminum foil and coat bulb with Olive oil. Wrap garlic and place in oven to roast for 30-35 minutes. Remove from oven to cool.
In a small bowl combine butter, garlic, oregano, rosemary, and chives until smooth.
Spoon butter onto a piece of plastic wrap and roll into a log or square shape. Wrap and refrigerate for 30 minutes or until firm.
For steaks, sprinkle with salt and pepper. Bring steaks to room temperature at least 20 minutes before grilling. Heat grill to 400 degrees.
Place steaks on hot grill and cook 4 minutes or until crust forms. Flip and cook about 5 minutes or until crust forms. You want a nice sear on both sides. Start testing for done with instant read thermometer at 125 for rare to 135 medium-rare and 145 for medium. Move away from direct heat if you need longer cooking at this point. Char is good burnt is not!
Remove steaks to platter and top with a slice of Roasted Garlic herb Butter. Allow to rest at least 5 minutes before serving.
