“Pineapple Dream Cake”

You may have seen a version of my Pineapple Dream Cake floating around on Instagram. When I first saw this recipe, I thought this is crazy and how good can this cake be. Calling all cake lovers! This is one recipe you’ve got to try to wrap your head around how something so simple can be so good.

Do you crave a sweet treat and don’t want to create a fuss in the kitchen? Here’s your recipe. If you love pineapple, toasted coconut, and whipped cream then this will be the best hour you’ll spend in the kitchen.

Cake, who doesn’t enjoy cake? No one I know. That said, give this cake a try if you’re not a cake lover. Consider Pineapple Dream Cake a snack cake because it’s baked in a square or round cake pan. There is no frosting however, I suppose you could add one or a maybe a glaze if desired. Yummy!

How to Make Pineapple Dream Cake

Two main ingredients come together magically

When I said easy, I mean unbelievably easy and also perfect for young bakers to make. So, let’s put this baby together with the quickness.

Grab a large mixing bowl and add cake mix and canned crushed pineapple, juice and all. Mix ingredients until thoroughly combined. There should be no dry ingredient remaining.

Pour batter into a square or round cake pan sprayed with non-stick cooking spray. Spread evenly and tap pan on counter to release any air bubbles. Bake cake in a preheated 350 degree oven for 30 to 34 minutes. A toothpick inserted will come out dry or very little crumb attached.

Allow cake to cool on wire rack for at least 30 minutes before serving.

Okay, let’s eat cake! Pineapple Dream Cake can be served warm or at room temperature as desired. I happen to like it a little warm yet it really doesn’t matter. This soft and flavorful cake is a dream loaded with pineapple. Your first bite will be an OMG! moment.

The cake need not be removed from the baking pan since you can cut servings as desired. Nine servings are adequate but small eaters may cut 12 servings.

Place a cake square on a dessert plate and top with whipped cream or make it easier by using Cool Whip. Sprinkle toasted coconut on top and place a maraschino cherry in the center and dessert is served.

Great recipe for young bakers

 

Pineapple Dream Cake

1 – 20 oz. can crushed pineapple in 100% pineapple juice (do not drain)

1 – 15.25 oz. box yellow cake mix

Whipped cream or cool whip, for serving

Toasted coconut, for serving 

Maraschino cherries, for serving

 

Heat oven to 350 degrees and coat a 9-inch square pan with non-stick cooking spray. Set aside.

In a large mixing bowl, mix together cake mix and can of pineapple including juice until no dry ingredient remains.

Pour cake batter into the prepared pan and bake for 30 – 34 minutes. Edges will become slightly brown and pull away from the edge of the pan.

Allow the cake to cool for 30 minutes to 1 hour before serving with whipped cream and toasted coconut. Best slightly warm to room temperature for serving.

 

Makes 1 – 9-inch cake (9 servings)
