Salmon with Creamy Shallot Dill Sauce

Four – 4 oz. to 6 oz. salmon fillets, skin removed

3 T. Olive oil

1/4 cup minced shallot

1 large garlic clove, minced

1/4 cup dry white wine

1 ¼ cups seafood stock or clam juice

1/2 cup heavy cream

1 ½ T. chopped fresh dill

 

Season salmon lightly salt and black pepper. Heat 1 T. Olive oil in large non-stick skillet over medium-high heat. Add in salmon and cook 3 minutes. Flip over salmon and cook 2 more minutes. Remove salmon from skillet to plate.

Wipe out skillet with paper towel, returning skillet to stove and add in remaining 2 T. Olive oil. Add in shallot and garlic, stirring and cooking for about 3 minutes or until tender.

Stir in white wine, cooking 3 minutes until wine is almost evaporated. Pour in seafood stock and heavy cream, bringing to boil. Reduce heat to medium and cook 15 minutes or until sauce has reduced by half and thickened, stirring often.

Return salmon to skillet. Cover and cook 5 minutes or until salmon is flaky when tested with a fork. Season sauce to taste.

Remove salmon to serving plates or platter and pour sauce over salmon.
