My Mom was an awesome cook and no matter what she made for breakfast, lunch or dinner you could always count on delicious and memorable. This past weekend I was craving biscuits and my Mom’s came to mind. She could make biscuits without using a recipe and her recipe turned out the same every time. Sometimes she would think her biscuits were just okay but Dad, my sister and I always thought differently. Her biscuits were always flaky yet moist, screaming for a big dollop of butter  hot, straight from the oven. So my thoughts bring me to my Sausage Gravy Over Buttermilk Drop Biscuits. Not Mom’s recipe but she would definitely be proud.

When my parents retired and living in Florida during the winter months I didn’t see them as often as I would have liked. So when my parents made their way back to Ohio during the summer and Mom knew I would be home for a visit, the question was always, “Do you want anything special while home?” What a crazy question that was. Of course I would say, “your biscuits and fried chicken.” Mom would always oblige me and what a treat this meal was. If I think about them long enough I can still taste that taste. Magnificent is all I can think. As a result, memory leads me to my Sausage Gravy over Buttermilk Drop Biscuits.

So over the years I have learned to make some good biscuits and made drop biscuits this time around mainly due to time constraints needing to be at work in a few hours. Buttermilk Drop Biscuits are super easy and can be whipped up in a matter of minutes. No kneading dough with additional flour and a messy kitchen counter. Just mix ingredients in a large bowl, scoop out biscuit dough balls, place on a baking sheet and bake. Brush your hot biscuits with melted butter straight from the oven. Enjoy topped with jam or honey or better yet my Sausage Gravy Over Buttermilk Drop Biscuits. Easy enough to make any day of the week but I really enjoy this recipe on the weekends. Kids especially like this recipe because they like to paint with gravy. My sister use to do that. Hilarious!

For my sausage gravy all you do is brown sausage in a large skillet, breaking up into small pieces while cooking. Drain sausage on paper towel and pour off fat if desired. Add sausage back to skillet and melt in butter. Sprinkle flour over sausage mixture, cooking for several minutes to cook out the raw taste of flour. Add in milk and half & half, cooking until thickened and adjust salt and pepper to taste. Finally you have Sausage Gravy Over Buttermilk Drop Biscuits. So simple yet so good.

Sausage Gravy Over Buttermilk Drop Biscuits

For Sausage Gravy:

1-pound Breakfast sausage

4 T. unsalted butter

1/4 cup unbleached all-purpose flour

1 ½ cups half & half

1 ½ cups milk

Kosher salt and freshly ground black pepper to taste

For Buttermilk Drop Biscuits:

2 cups unbleached all-purpose flour

2 t. baking powder

1/2 t. baking soda

2 t. granulated sugar

3/4 t. fine kosher salt

1 cup buttermilk, chilled

1/2 cup unsalted butter, melted plus 2 T. for brushing tops

 

In a large non-stick skillet over medium-high heat, brown sausage, breaking into small pieces, about 10 minutes. Drain sausage on paper towel to remove excess fat. Place sausage back in skillet and add in butter, cooking until melted. Stir in flour and cook for 2-3 minutes until no visible flour remains.

Gradually pour in half & half and milk, stirring to thoroughly combine. Cook for about 5 – 7 minutes until heated through and gravy thickens. Adjust salt and pepper to taste.

Serve Sausage Gravy over Buttermilk Drop Biscuits.

To prepare biscuits, heat oven to 450 degrees and line a rimmed baking sheet with parchment paper; set aside. In a large mixing bowl, whisk together flour, baking powder, baking soda, sugar, and salt.

In a small bowl, mix buttermilk and 1/2 cup butter until mixture becomes lumpy. Add buttermilk mixture to bowl with dry ingredients, mixing with large spoon or spatula until just combined and batter pulls away from sides of bowl.

Scoop about 1/4 cup portions onto prepared baking sheet, 1 ½-inches apart. Bake for 10 to 12 minutes until tops are golden brown.

Brush hot biscuits with 2 T. melted butter. Cool 5 minutes before serving. Top biscuits with Sausage Gravy, jam, honey or other desired topping.

 

Makes 10 drop biscuits.
