“Spicy Red Cabbage Slaw”

I love cabbage of any kind. Red cabbage is one we tend to only use in salads or maybe for braised sweet and sour cabbage served with pork roast. But as I was planning my lime recipes for the month, I ran across a recipe I had made when entertaining friends a while back, Spicy Red Cabbage Slaw.

When I came up with this recipe, I had made a Mexican style pork shoulder roast as I had decided on a Mexican food theme. We were going to be watching a Blackhawks game on a Sunday afternoon. So, the roast was screaming for a spicy, sweet yet savory side. I didn’t want anything with a mayonnaise base or anything creamy. My slaw combines red cabbage of course, along with honey, lime juice, cilantro, hot sauce, sugar and salt. Nothing like sweet heat…OMG!!! This slaw keeps it’s crunch for several days in the refrigerator and is even better as a leftover. I think you’ll enjoy this slaw recipe. Try Spicy Red Cabbage Slaw with Steak Tacos…it’s delicious!

Spicy Red Cabbage Slaw

3 1/2 c. thinly sliced red cabbage

1/2 cup cilantro, chopped

4 T. lime juice

2 T. honey

1 to 2 t. hot sauce

1 t. sugar

1/2 t. salt

In a large bowl, combine cilantro, lime juice, honey, hot sauce, sugar and salt. Add in cabbage and toss until evenly coated with dressing. Cover and refrigerate to chill 2 hours. Mix again before serving as a side or on tacos.
