Who doesn’t love tacos? These days take your pick of ingredients to create many different flavor and texture combinations for tacos. Whether you use corn or flour tortillas makes no difference. It’s a personal thing! Isn’t that what cooking is all about? Behold, my Steak Tacos Marinade.
Steak Tacos Marinade is easy and has a wonderful flavor, both slightly sweet and savory. I’m counting down the days when I can cook this meat on the grill to make tacos. Anyway, I use skirt steak, marinate the meat overnight in a mixture of Coca Cola, onion, garlic, brown sugar, olive oil, and soy sauce. Prepare your meat by using a grill pan, cast iron skillet or outdoor grill. Use the meat for tacos or burritos. This recipe is also great for nachos and quesadillas. Steak Tacos Marinade
Steak Tacos Marinade
1/4 cup finely diced red onion
2 garlic cloves, finely minced
6 oz. Coca-Cola
1 T. light brown sugar
2 T. olive oil
1 1/2 T. soy sauce (I use Tamari)
1 1/2 pounds skirt steak, trimmed
Salt and pepper to taste
8 corn tortillas
In a large Ziploc bag, add onion, garlic, cola, oil and soy sauce. Close bag and massage to mix ingredients. Open bag; add steak. Reseal bag, releasing air. Place in refrigerator to marinate over night or 24 hours.
Sear steak on outdoor grill, indoors on a grill pan or cast iron skillet to desired doneness. About 4 to 5 minutes on each side, depending on thickness should be medium.
Warm corn tortillas in a dry skillet. Slice steak against the grain; serve steak tacos with desired toppings like Pico de Gallo, salsa, sour cream, and cheese.
