“Veggie Snack Jars”

Welcome back to Little Appetites. School is back in session and the hunt begins for keeping after school snacks and lunch goodies available for your kids. Healthy snacks are a priority for most parents. Even when eating healthy, food that is fun is most helpful. Kids are not as likely to turn up their noses. Once kids get hooked on something, they can eat it day in and day out. That’s how I came up with this healthy school lunch and snack idea, Veggie Snack Jars. What kid doesn’t like ranch dressing? I don’t know any so let’s put this pantry staple to good use.

Veggie Snack Jars

In small glass jars (Ball) or plastic containers, fill 1/4 full with ranch dressing. Then add petite veggies like carrots, cutie cucumbers, sweet baby peppers or celery. Put lid on and store in refrigerator for your kids to grab after school or pack in their lunch bags. They’re cute, fun and just the right size. Your kids can join in the fun of making their own. It’s a perfect Sunday activity helping Mom get ready for the busy work week. You’ll know your kids are eating healthy and everybody had a great family moment. Veggie Snack Jars

Mini Sweet Peppers, seeded and cut in half

Cutie Cucumbers, ends trimmed and cut in half horizontally

1 package Hidden Valley Ranch Buttermilk Recipe Dressing Mix

1 cup mayonnaise

1 cup buttermilk

Small jars or containers with lids

In a medium bowl, combine Ranch dressing mix with mayonnaise and buttermilk. Stir until well combined; refrigerate until ready to use. Prepare cucumbers and peppers.

Fill small jars 1/4 full with ranch dressing. Add peppers and cucumbers to jars, standing up in dressing. Place lids on jars and store in refrigerator until ready to serve or your kids are ready for a snack.

Note: Veggie Snack Jars can be packed in school lunches. I recommend plastic containers for school lunches and little ones. Carrots and celery make great snacks with ranch dressing, too.
