“Grilled Chipotle Honey Lime Wings”

Time to get your grillin’ on! My Grilled Chipotle Honey Lime Wings are on the menu and for a darn good reason. Who doesn’t love a good chicken wang (chuckle)? This recipe is so easy and delicious. Got a family that loves chicken wings? Give this recipe a try any night of the week.

The sticky, sweet heat and a zing of lime makes the perfect quick marinade for some finger-lickin’ good wings. Great for any ocassion, most importantly, feeding your family. Even the pickiest eaters will love these lip-smacking good eats.

Grilled Chipotle Honey Lime Wings

Sticky sweet heat chipotle honey lime glaze makes wings irresistible.

What makes these wings so special is the marinade. All you need is:

  • fresh lime juice
  • olive oil
  • honey
  • garlic
  • chopped chipotles in adobo

Of course, you need chicken wings and as small as you can find. The smaller the wings are the better because they cook faster and have less fat. Larger wings do not get that crispy exterior skin we all love.

I’m sure over the years you may have noticed the size of chicken wings have increased. Mainly because of demand, the hunt for smaller wings can be a challenge. As far as I’m concerned, taking the time to shop for smaller is so worth the trouble. I’m not a fan of slimy texture wings which comes from size and not cooking long enough.

My mom was the grill expert in our house, and she could grill up the best chicken no matter what piece of the bird she was grilling. Mom’s wings would knock your socks off.

I recommend looking for packages containing drummies and wingettes. They may or may not be more expensive than whole wings, however, with pieces there is no need to cut wings into pieces. Also, like I mentioned prior, smaller wings are best for the tastiest wings. You decide what works best for you and what you like.

Grilled Chipotle Honey Lime Wings

Be sure to have plenty of napkins on hand

Okay, let’s grill up these Chipotle Honey Lime Wings and be sure to have plenty of napkins on hand.

First, you want to gather all your ingredients for the marinade. You’ll need:

Whisk together all ingredients in a small bowl until combined and set aside. Add salt and black pepper to taste.

Next, trim chicken wings as needed whether you’ve purchased whole wings or wing pieces. If you purchased whole wings, keep wing tips and freeze for making stock later.

Add chicken wing pieces to a Ziploc bag and pour in marinade. You can double the recipe for feeding more people. Close bag and massage bag to coat chicken. Refrigerate chicken for minimum 1 hour to overnight.

When ready to grill wings, bring chicken to room temperature 30 minutes before grilling. Pour marinade into a small saucepan and boil for 5 minutes and set aside.

Heat your grill according to manufacturer instructions and prepare for indirect cooking at 400 degrees. Place wings on indirect cooking side of grill and cover. Cook, turning as needed until fat is rendered. The wings should have nice color in about 15 minutes.

Baste wings with reserved marinade and move to direct heat and grill uncovered. Turn wings as needed and glaze each time. This will take another 10 minutes depending on size of wings.

Last, remove wings to a serving plate and discard any remaining marinade. Serve this sticky goodness with your choice of side. Someone is gonna holler, “Mom, I need a napkin!”

Now, you have another delicious wing recipe to add to your weekly meal rotation and with good reason. No one can resist the sticky honey glaze with a little heat and lime. Pairs beautifully when grilled. I recommend using this marinade on other chicken skin-on pieces. Perfect amount of sweet and heat.

As long as it isn’t raining, I’m always firing p my grill and I bet you do, too. It’s always a party where there is chicken wings. Kids and adults enjoy love them just as much. That’s why finding the exact size wings is a little harder these days.

This wing recipe works great in the oven as well when grilling isn’t an option. The wings still turn out just as delicious. Grilled Chipotle Honey Lime Wings

2 – 2.5-pounds chicken drummies and wingettes

1/4 cup olive oil

3 T. fresh lime juice

1 garlic clove, minced

3 T. chopped chipotles in adobo plus some sauce

2 T. honey, to taste

 

For the marinade, in a 2-cup measure, whisk together olive oil, lime juice, garlic, chipotles, and honey to taste. Adjust any ingredients to your liking.

Place cleaned and dried chicken into a Ziploc bag. Pour marinade over chicken and allow to marinate for minimum 1 hour to overnight in the refrigerator.

Remove chicken from refrigerator and bag, placing them on a plate. Reserve any leftover marinade and pour in a small saucepan.

Boil marinade for 5 minutes to cook before using to glaze wings. Leave chicken at room temperature for 30 minutes before grilling.

In the meantime, heat, clean and oil grill according to manufacturer’s instructions to about 375 – 400 degrees. Leave one side off for indirect cooking.

When ready to grill, place chicken on indirect side of grill and cook covered, turning as needed to render most fat. The wings will cook about 20 to 25 minutes.

Brush wings with any remaining marinade to glaze the wings over direct heat. You can make more marinade for glazing if necessary.

Cook wings uncovered until they are nicely browned and glazed on both sides, turning as needed.

Serve hot and enjoy!

 

Makes approx. 24 to 30 wing pieces.
