“Jumbo Apple Butter Crumb Muffins”

Today I am bringing you a muffin recipe that will brighten any breakfast morning. Kids will adore these muffins and since they have e-learning and you may be working from home, what better choice. Cooking gives me a break from boredom and right now a great chance to share recipes I love with you, my fellow foodies. Hence, Jumbo Apple Butter Crumb Muffins are on your next breakfast menu. Good ahead, take a break from cereal, overnight oats, etc. They are deliciously moist and go great with a cup of coffee or milk.

Right now is a good opportunity to share cooking together in your kitchen. Cooking is optional in the world we live in with delivery services everywhere. Yet, at this time in our lives delivery and pickup is the only way to get meals or by cooking yourself. You may venture out one day out of the week to grocery shop so choose easy recipes. We want to eat as healthy as possible and if funds are low like for so many, a budget is a must. Well this would be a muffin recipe to make. These muffins do keep for several days in an airtight container. I like to warm them up and smear a bit of butter on. Yum!

You can bake these in a 12-cup muffin tin but remember to adjust the baking time. Spray muffin tins with non-stick spray because there is no need for paper liners unless you prefer. Another great thing is you can fill the cups to the top as these muffins puff up and not spill over. That would be a nightmare if baking cupcakes.

Easy is as easy does and this recipe is super easy. All you do is mix batter, fill tins halfway with batter then spoon in apple butter and fill the rest of tin with batter. Sprinkle on crumb topping and bake. remove from oven, let rest and serve warm or at room temperature. Drizzle on glaze if you like but it is optional but go ahead live a little, drizzle away.

Jumbo Apple Butter Crumb Muffins

2 cups all-purpose flour

1/2 cup granulated sugar

3 t. baking powder

1 t. ground cinnamon

1/2 t. fine sea salt

1 large egg

3/4 cup whole milk

1/2 cup vegetable oil

1/3 cup apple butter

Crumb Topping:

1/2 cup all-purpose flour

1 t. ground cinnamon

1/2 cup light brown sugar

1/2 cup chopped pecans

4 T. unsalted butter, softened

Glaze:

1/2 cup confectioners’ sugar

1 to 2 T. whole milk

1/4 t. ground cinnamon, optional

 

Heat oven to 425 degrees. In a medium bowl, combine flour, sugar, baking powder, cinnamon, and salt. Using another medium bowl, whisk together egg, milk, and oil. Add dry ingredients into wet ingredient, mixing until just combined. Do not over-mix batter!

For crumb topping: Combine flour, cinnamon, brown sugar, and pecans. Using a fork, blend butter into flour mixture until crumbly.

Spray jumbo muffin tins with non-stick cooking spray then spoon a heaping tablespoon of batter into each cup. Put 1 T. of apple butter on top of batter. Next sprinkle some crumb topping over apple butter and divide batter between each tin. Sprinkle evenly top of muffins with remaining crumb topping.

Bake muffins for 5 minutes then reduce temperature to 375 degrees and bake for an additional 15 minutes until toothpick inserted comes out clean. Let muffins rest on wire rack while glaze is prepared.

For glaze: In a small bowl, whisk together confectioners’ sugar, milk and cinnamon, if desired until smooth and drizzle glaze over muffins.

Serve warm with butter or at room temperature.
