I hope this post finds everyone doing well and know we’re all in this together. So, right now as we work from home or praying for those on the front lines, food is on our minds. We’re trying o support our local restaurants by drive-up and delivery services offered. We all need a paycheck and we all must eat. This particular day I wanted a salad and I did think about going through a drive thru yet no one had what I wanted. Having purchased iceberg lettuce for another meal, I said what the heck and made Wedge Salad with Homemade Blue Cheese Vinaigrette. Can we talk?

A wedge salad is an old stand-by and one I was delighted to know I had all the fixins. You see this salad at some of your better restaurants and I do enjoy making them at home. I had bought the lettuce for tacos and another salad for later in the week. That said, when you get a taste for something, you have to have it. I had grape tomatoes and of course, I had blue cheese. Some sort of cheese is always available in my refrigerator.

Not sure why I don’t make this salad more than I do because it is so easy to prepare. Simple and easy always works in my book. Just cut the head of lettuce into 4 wedges and slice grape tomatoes in half. Crumble cooked bacon or buy a package of crumbled bacon. The best part of this salad is the blue cheese vinaigrette. It’s not your normal poured dressing, as a result is on the thicker side.

Serve As A Side Salad or A Light Lunch or Dinner

The tangy vinaigrette can be used in two ways like dribbled on the salad wedges. Also, you can pour dressing around the sides of a salad bowl and add in chopped lettuce, tomatoes and bacon. Toss salad to coat as desired and serve immediately. I love this salad both ways because you can control how much salad you’ll be serving. If you prefer a thinner vinaigrette, whisk in more Olive oil. No matter, you’re going to love it. Add these ingredients to your next grocery pickup or delivery. You’ll be glad you did and wonder why I haven’t made this salad more often.

 

Wedge Salad with Homemade Blue Cheese Vinaigrette

1 head iceberg lettuce, core removed

1 large garlic clove, minced

1/2 t. dried oregano

1 to 2 t. granulated sugar

2 T. red wine vinegar

1/4 cup Olive oil or more as desired

4 oz. crumbled blue cheese

Salt and black pepper to taste

Grape tomatoes, cut in half, for serving

Crumbled bacon, for serving

 

In a small bowl, whisk together garlic, oregano, sugar, vinegar, and Olive oil until combined.

Add in blue cheese and stir until well mixed. Season with salt and pepper as desired.

Cut lettuce into four wedges and place on salad plates.

Serve with tomatoes and bacon then drizzle with vinaigrette.

 

Makes 4 salads.
