“Melting Sweet Potatoes”

Sweet potatoes come in many varieties and flavor does vary depending on variety. I used red sweet potatoes to make my Melting Sweet Potatoes but you can use whatever variety you like. Think I feel a new post in the making. Hmmm? Anyway…

Relatively low carb, sweet potatoes are part of healthy diet except these potatoes do have added sugar as in maple syrup and marshmallows.

You can customize this recipe to your liking like using different nuts. Use walnuts instead of pecans, omit maple syrup and use herbs like rosemary or thyme.

However, this recipe fabulous just the way it is. The potatoes are not too sweet yet perfectly caramelized and the crunch of pecans is a winner. The ground cinnamon adds a touch of spice, and you can add more if you like or other spices like cardamom.

Keeping this recipe simple was key like not adding to many ingredients for a simpler flavor profile. When cooking for winter holidays, do you tend to amplify flavor by more sugar, spices making some sides very decadent?

In the spring and summer, we tend to lighten things up a bit. I like sides that can be made to go along with my main entree. Sweet potatoes go with just about everything.

Ham is a perfect match along with roast chicken, roast beef, pork roast and seafood. Serve for brunch in a homemade potato hash, and omelets. What about muffins or quick bread. Sweet potatoes just speak my language and if you’re a fan of sweet potatoes you’ve got to try this recipe.

Not sure why I haven’t posted this recipe before now. Probably because I was taking this dish to a gathering, and everyone dug in before I could get pictures. You know you get distracted when everyone’s fixing their plate.

Regardless, my Melting Sweet Potatoes will make it easy for you to throw in another side dish quickly. You just can’t go wrong, and kids will love the toasted marshmallows.

Melting Sweet Potatoes

Sweet potatoes are a family favorite

First, heat your oven to 425 degrees and line a rimed sheet pan with foil. Make sure the dull side is up.

Second, peel sweet potatoes, cutting off root end. Cut potatoes into 1/2-inch to 1-inch slices. If slices are more than 1-inch, they will need to bake a bit longer. Add potatoes to a large bowl and set aside.

Third, using a microwave safe bowl, melt butter and whisk in salt and cinnamon. Pour butter over potatoes and use your hands to ensure potatoes are completely coated.

Next, place slices on prepared sheet pan and bake for 15 to 20 minutes. Take pan from oven and turn over potatoes. They should be beautifully caramelized.

Now, pour maple syrup over potatoes and sprinkle with chopped pecans. Return to oven and bake for another 15 to 20 minutes or until a pointed knife inserts and comes out easily.

Lastly, remove pan from oven and top potatoes with mini marshmallows. Return to oven to brown marshmallows. This will only take a couple minutes. Don’t walk away because marshmallows brown quickly.

Allow potatoes to cool 5 minutes before serving. Easy peasy, right? Yes, and delicious to boot.

This sweet potato recipe is easily adaptable according to how many people you’re serving. They taste like you took hours in the kitchen. You only need a sheet pan and 2 bowls and not alot of messy cleanup.

You just can’t go wrong

 

Melting Sweet Potatoes

3 – 4 medium size sweet potatoes

3 T. melted unsalted butter

3/4 t. ground cinnamon

1/2 t. kosher salt

1/2 cup maple syrup

1/2 cup chopped pecans

2 cups mini marshmallows or to taste

 

Heat oven to 425 degrees. Line a rimmed baking sheet with foil, dull side up and set aside.

To prepare sweet potatoes, peel and cut off stem end. Cut potatoes into 1/2- to 1-inch-thick slices. Cutting slices any thicker will require a longer cooking time, about 5 to 7 minutes.

Place potato slices in a large mixing bowl and set aside.

Using a microwave safe bowl, melt butter and whisk in cinnamon and salt until combined.

Drizzle butter mixture over sweet potatoes. Use your hands to coat potatoes completely.

Place sweet potatoes on prepared baking sheet and bake for 15 to 20 minutes.

Remove pan from oven and gently turn over potatoes. Pour on maple syrup and sprinkle on chopped pecans.

Return pan to oven and bake another 15 to 20 minutes or until tender when a fork is inserted.

Again, remove pan from oven and scatter mini marshmallows as desired. Return pan to oven and bake 3 – 5 minutes or until marshmallows begin to brown.

Allow potatoes to sit for 5 minutes before serving. You can serve the melting potatoes from a platter.
