“Brown Butter Marshmallow Treats”

No matter how old you are, how many Rice Krispie treats have you eaten over your lifetime. Let’s just say plenty have been devoured. Well, I bet you’ve never tasted anything as delectable as these Brown Butter Marshmallow Treats.

Imagine the smell of browning butter so nutty and beautiful then stirring in mini marshmallows until a smooth white fluff is formed. Now add in rice cereal and mix until all the cereal is coated in marshmallow fluff. Spread in a pan, cool, cut and eat.

Are you drooling yet? Because you should be by now. Just the thought of a gooey crunchy bite has my tastebuds do summersaults. How about you? I know they’re a sin and a shame. (laugh)

Years ago, I did alot of traveling for a company and was able to visit some really fabulous restaurants. However, eating out does get old and the yearning for homemade foods is heightened.

That said, one day I stopped by a popular restaurant for some pasta and noticed they had these gigantic marshmallow treats. Of course, I bought one. Lord, the first bite took me back the days gone by.

Not being a fan of the store-bought varieties, all I felt was the need to make these babies myself. Now don’t get me wrong, I have made hundreds of this kid favorite sweet treat. Yet something in the taste is missing and never enough marshmallow. Brown butter is key. Trust me on this one, my friends.

Recently, I stumbled upon a recipe from @handletheheat I just had to try. Tessa is the creative mind behind the wonderful recipes and tips plus much more. Tessa’s recipe for these fan favorites is to die for. You’ll never go back to making marshmallow treats from the back of the box and without brown butter again.

A kid favorite but who adults can’t have one?

In my opinion, everything is better homemade. No matter where you travel and eat, home cooking stands its ground especially comfort food and simple sweets.

I adapted the recipe a bit yet keeping the same integrity as the original. No worries, Tessa! I love, love, love this recipe. You can’t go wrong as cereal is coated in just the right amount of marshmallows.

The marshmallows are mixed with brown butter which creates a nutty, appealing flavor. Brown butter is good in just about anything like “Browned Butter Pretzel Chip Cookies”, “Browned Butter Macadamia White Chocolate Cookies”,, and “Browned Butter Cardamom Sugar Cookies”.

Brown butter enhances other ingredients in a recipe. Try it for yourself and see what I mean.

However, grab your grocery list and run to purchase all the ingredients to create some nostalgia in your kitchen. I promise you’ll always have the stuff needed to whip up a batch whenever you wish. That could easily become quite often.

Brown Butter Marshmallow Treats

You can’t eat just one.

Ready for a batch of Brown Butter Marshmallow Treats? Me, too.

You’ll need 9 cups of rice cereal of your choice and I know that sounds like alot but bare with me here.

Next, you’re going to brown your butter in a large 6-to-8-quart pot. Heat butters on medium heat until it begins to bubble and become frothy. At this point, the bubbles will start to become clear, and butter will begin to turn a light amber color.

Stir in marshmallows, vanilla and salt until thoroughly melted and combined. Remove from heat and stir in rice cereal until completely coated.

Immediately spread mixture in a 13X9-inch pan coated lightly with non-stick spray. Press firmly but not so hard the treats will be hard when cooled. You want to pat out mixture evenly. Cool for an hour then cut and serve.

Bet you’re thinking what a great idea for the kids on Easter. Please, do with the kids helping, of course. Have the kids choose their favorite color sprinkles to mix in. Maybe you’ll choose to dip the ends in chocolate or almond bark. It’s alright to create your own magic.

I’m telling you there’s magic in them their bars as my Granny would say about something she baked that was so dang delicious. This recipe truly resonates with me.

Brown Butter Marshmallow Treats

Chewy, crunchy, nutty…yum!

 

Brown Butter Marshmallow Treats

1 stick (1/2 cup) unsalted butter

1 stick (1/2 cup) salted butter

1 t. pure vanilla extract

2 – 10 oz. bags miniature marshmallows

1/4 t. kosher salt

9 cups Rice Krispie’s cereal or similar brand

 

Spray a 13×9 baking pan with non-stick cooking spray and set aside.

In a large sauce pot, begin melting butter over medium heat and cook butter until butter begins to brown.

The butter will become foamy as milk solids sink to bottom. This takes about 7 minutes for butter to become amber in color.

Remove pot from heat to add marshmallows and salt. Return pot to heat, stirring to melt marshmallows.

Remove pot from heat and stir in rice cereal, mixing until thoroughly combined.

Place cereal mixture into prepared pan. Butter your hands and press treats firmly in pan. Don’t press mixture to tightly or treats lose the chewiness and become hard.

Allow to cool for 1 hour before cutting as desired and serving.

Store in an airtight container up to 3 – 4 days.

 

Makes 1 – 13×9 pan.
